Abstract
Using the steam retort, or autoclave process it is possible to successfully can Tilapia freshwater fish using process parameters of 42 minutes at 121°C. De-boned and skinned cut fillet pieces are used in the process. The process comprises the steps of removing unnecessary parts from the Tilapia, washing and cutting the fish into pieces of a pre-determined length and size, placing the Tilapia pieces into a can with spring water and sealing, pasteurising the product in an autoclave to the process parameters and cooling the can.

Canned Freshwater Tilapia The purpose of this innovation is to provide a manufacturing technique for canning freshwater Tilapia.
In August 2007 a report was issued for the INFOFISH Tilapia Conference in Kuala Lumpur. The report highlighted the increase of world Tilapia production over the last twenty years, with total production estimated at 3.5 million tonnes by 2010.
Approximately 1000 tonnes are imported into Europe each year.
The final outlook was that Tilapia supply will continue to expand in the coming years with added products from developed countries.
There are in the region of 5000 Asian/ethnic supermarkets in the UK alone with the majority selling whole frozen Tilapia, and not in tins.
This technique enables the safe canning of freshwater Tilapia to UK/EU standards.
The manufacturing method for canned Tilapia comprises the following steps: 1. Removing unnecessary parts of the Tilapia.
2. Washing and cutting to a pre-determined length and size.
3. Putting Tilapia in a can and sealing with spring water medium to retain taste and flavour.
4. Pasteurising the product in an autoclave.
5. Cooling the can after heat treatment by controlling the time and heat parameters.
6. Tilapia is a freshwater fish that was tested to the following restrictions: * Process Steam retort (Autoclave) * Product style Cut fillet pieces (de-boned and skinned) * Minimum initial temperature 0°C (Thawed if frozen prior to filling) * Minimum process temperature 121°C +1-0.5°C * Process time 42 minutes * Minimum retort come up time 10 minutes

- Claims 1. To enable the safe canning of freshwater Tilapia to UK/EU standards.
- 2. Using the steam retort process (Autoclave) it is possible to preserve in a metallic container -freshwater Tilapia, retaining texture and flavouring.
- 3. The process time required in order to achieve an end of heating F0 of 3 is 42 minutes at 121°C.
