Abstract

The invention relates to the use of cyclohexadienyl butanone derivative(s) having the generic structure: <IMAGE> wherein X represents one of: <IMAGE> in a consumable material, especially for augmenting or enhancing the aroma or taste or organoleptic properties thereof. There is also provided corresponding flavor augmenting or modifying compositions, 1-(2,6,6-trimethyl-1,3-cyclohexadien- 1-yl)-1,3-butanedione having the structure: <IMAGE> per se, an equilibrium mixture containing compounds having the structures: <IMAGE> as well as a process of preparing such a mixture and an organometallic compound having the structure: <IMAGE> wherein X represents halogen selected from chloro, bromo and iodo. The consumable material may be a foodstuff, chewing gum, toothpaste, medicinal product, tobacco, perfume, soap or detergent.
