Abstract
A process for the continuous deoderization of cocoa butter by steam in which the cocoa butter is continuously homogenized with deionized or distilled water before being subjected, in a continuous process, to steam distillation in a thin layer evaporator for evaporating the water with odour forming components. The thin layer evaporation is carried out at a steam pressure of 2.5+/-0.5 atm., a temperature of 65+/-15 DEG C and a vacuum of 10-30 mm Hg. The deionized or distilled water is admixed with the cocoa butter in an amount of 10+/-1.0% by weight, calculated on the homogenized mixture.
