Abstract
Lecithin is obtained from vegetable materials by extracting with a mixture of alcohol and at least 10 per cent of benzene. The extract is warmed until substantially free from solvent, the sediment separated and steam introduced into the oily residue. The lecithin is finally separated from adhering oil in known manner. A preferred solvent mixture consists of two parts of 96 per cent alcohol to 3 parts of benzene. The raw materials should not contain more than 10 per cent of water and the concentration of water in the extract should not be allowed to reach more than 10 per cent of the alcohol present. If the initial materials contain no fatty oils these must be added to the extract before the subsequent operations.
