Abstract

A starchy material consisting, at least for the most part, of barley is subjected to an enzymatic degradation treatment by the action of a Streptomyces amylase and an Aspergillus protease. This process makes it possible to simplify the manufacture of brewing wort, by virtue of the suppression of malting, without adversely affecting the organoleptic properties of the beer which is finally obtained.
