1445083 Diacetyl in bees BREWINGS PATENTS Ltd 18 Oct 1973 [20 Oct 1972] 48532/72 Heading C6E Freshly fermented beer is held at a temperature in excess of 40‹C e.g. in the range of 60-80‹C, to convert diacetyl precursors to diacetyl, and the beer is then cooled to a temperature below 40‹C and contacted with yeast for a sufficient time to effect substantially complete breakdown of the diacetyl content.
