Abstract

1324557 Gelling agents GENERAL FOODS CORP 2 Nov 1971 [23 Dec 1970 14 Jan 1971] 50966/71 Heading A2B Xanthan gum, together with starch and/or tara gum is employed as gelling agent in the preparation of gelled aqueous compositions, including starch desserts. Also present may be locust bean gum. Other ingredients may include fats, milk solids, carbohydrates, sweetening, colouring, and flavouring. The product may be acidic. A phosphate salt may be present, but the composition is preferably free of metal salts.
