Abstract

1375189 Microbiological production of protein STANDARD OIL CO 28 Oct 1971 [30 Oct 1970] 50198/71 Heading C3H [Also in Division C6] A process for the continuous production of food-quality yeast, particularly of the species Candida utilis, Saccharomyces cerevisiae or Saccharomyces fragilis, involves growing the yeast on an aqueous ethanolic fermentation liquor at a temperature of from 80‹ to 100‹ F. in the presence of air or oxygenated air, ammonia and an excess of essential macro-nutrient elements and micro-nutrient elements (including iron), introducing ethanol and the macro- and micro-nutrient elements into the fermentation to maintain a substantially constant concentration in the fermentation liquor, the iron (at least) included in the micro-nutrient elements being added separately by the direct introduction of ferric citrate solution, introducing ammonia to maintain the pH of the fermentation liquor in the range 2À5 and 6À5, and withdrawing a suspension of yeast cells in fermentation liquor. The withdrawn yeast cells are separated from the associated fermentation liquor, and about 80 vol. per cent of the supernatant liquor is recycled together with "make-up" constituents after sterilization. The fermentation may be maintained under a gauge pressure of from 2 to 20 lbs./sq. in. Ammonia may be included in the air stream. Effluent gas withdrawn may be scrubbed with a stream of water and the resulting ethanolic solution used for the ethanolic substrate. A typical amino acid profile of yeast grown on ethanol is set forth.
