Abstract
1284721 Tea extracts FINLIP PRODUCTS Ltd W LINDSAY V N BAHAL and W B EYTON 24 July 1969 [1 Aug 1968] 36828/68 Heading A2B A process of preparing a tea product comprises extracting tea leaves to give an extract (a) of tea solids soluble in cold (ie <35‹C) water) further extracting the tea leaves with hot water or alkaline aqueous solution to give an extract (b), oxidising extract (b) and combining the extracts. The leaves may have been fermented, withered, dried or treated with an alkaline solution in the presence of oxygen or air or an oxidative enzyme preparation prior to extraction. Extract (a) may be produced by one ore more pressings and/or one or more cold water extractions. Extract (b) may be produced by a plurality of extracting steps. Extract (b) is preferably oxidised in the presence of molecular oxygen (oxygen or air) at 50-130‹C at an alkaline pH which pH may be produced by the addition of ammonium, sodium or potassium hydroxide, carbonate or bicarbonate to the extract. The pH of oxidised extract may be reduced e.g. by the use of an ion-exchange resin, electrodialysis or by the addition of acetic acid prior to mixing with extract (a). Before or after combining the extracts (a) and (b) they may be subjected to one or more of the following steps: (1) a clarification step comprising cooling and centrifuging; (2) a dehazing step comprising adding a water-soluble salt and separating the formed precipitate; (3) a concentration step comprising e.g. freeze concentrating or reverse osmosis, and (4) a drying step comprising freeze or spray drying. The volatile essential oils which may be stripped during concentrating may be condensed and returned to the extract. Milk, sugar, lemon, caffeine and maltodextrins may be added to the tea product.
