Abstract
1,134,793. Coating polished rice. KYOWA HAKKO KOGYO K.K. 4 July, 1967 [4 July, 1966], No. 30823/67. Headings A2B, A2D and A2Q. A process of preparing polished rice fortified with an amino acid having a reduced tendency to discolour on storage and improved resistance to loss of the amino acid on washing with water, comprises coating the polished rice with a mixture of an amino acid (e.g. L-lysine) and a calcium salt (e.g. calcium chloride, carbonate, acetate or lactate). The rice may be sprayed with or steeped in an aqueous solution of the amino acid and calcium salt. The rice may be coated with calcium or sodium celulose glycollate during or after coating with the other coating agents. The polished rice may be treated with steam prior to being coated.
