Abstract
A mustard product with a controlled degree of bite, and comprising endosperm and spermoderm, is prepared by maintaining the seed in contact with saturated steam for a time sufficient to inactivate the enzyme myrosinase to provide a mustard with the desired degree of bite. The product may be dried to less than 10% moisture content and/or reduced in size to less than 40 mesh.
