Abstract

A process for the preparation of a fat suitable for use as a cocoa butter substitute comprises (1) transesterifying a fat mixture at a temperature above the melting point of the fat mixture, in which fat mixture from 70 to 90% of the fatty acid content is saturated fatty acids, not more than 5% of the total of saturated fatty acids has more than 18 or less than 16 carbon atoms per molecule, the unsaturated fatty acids comprise mainly oleic acid, not more than 30% of the unsaturated fatty acids is linoleic acid and not more than 5% of the unsaturated fatty acids is other unsaturated fatty acids, and (2) removing the high-melting compoenents from the product of (1) by pressing or filtering. The saturated fatty acids may be stearic and palmitic. The fat mixture used in (1) may include the high-melting fraction from a previous stage (2). The product may be mixed with shea oil and/or a high melting fraction of red palm oil.
