Abstract

Flour with a high degree of starch damage is produced in a roller mill (see Division B2) forming part of apparatus for breaking and reducing wheat products, such as whole wheat grains or purified endosperm particles of a selected size. The maltose content of the flour increases with starch damage. Natural enzymes in the flour may be inactivated and replaced by an amylase preparation.ALSO:A roller mill having fluted rolls, the flutes being inclined in opposite directions at the co-operating faces of the rolls, for producing flours with a high degree of starch damage is characterised in that the flutes of one of the rolls are spaced not more widely than twelve per inch and in that the rolls are rotatable at unequal speeds with a differential in the range 8:1 to 80:1. The flutes of one of the rolls may be spaced more widely than those of the other roll in which case the roll having the more widely spaced flutes is driven as the slower of the two rolls. The gap between the rolls is preferably adjusted to yield a predetermined proportion of acceptable flour-sized particles. The wheat products to be ground may be whole wheat grains or purified endosperm particles of selected size derived from the products of the 'break' and early 'reduction' sequences of a conventional milling process.
