Abstract

1,033,673. Filleting fish. R. G. T. BAADER [trading as FA. NORDISCHER MASCHINENBAU RUD BAADER]. Jan. 15, 1963 [Jan. 15, 1962], No. 1880/63. Heading A2U. Flesh is removed from its supporting surface, e.g. in filleting fish by scraping between the flesh and the supporting surface with a blade having a blunt and flexible edge which exercises either a rectilinear or rotary motion and closely follows the contour of the surface, e.g. bone, supporting the flesh. In filleting fish, e.g. hake, initial cuts are made to open the belly cavity and allow the belly flaps to be folded back, whereupon incisions are made above the ribs up to the dorsal spine to allow access of the flexible scraper, e.g. a pair of rotary discs which may, if desired, have a dish configuration to pare the flesh away from the dorsal spine (Figs. 5, 12) and off the ribs also, if desired (Fig. 10).
