Abstract
107,218. Jenkins, A. J. May 19, 1916. Cereal preparations.-In carrying out a process of bread-making, a small quantity of a speciallyprepared flour is mixed with the main batch. This special flour is made of 12 lb. of strong white wheat flour, 2 lb. of maize or corn flour, 4 oz. of sugar, and 8 oz. of common salt. Six pounds of this flour are allowed to stand in 1 gallon of water at about 150‹ F. until the water cools to 80‹ F., after which the paste is kneaded with the main batch of dough in the proportion of 1 gallon of the paste to every 7 lb. of flour, to each 14 lb. of which latter a gallon of water at 80‹ F. had already been added to form a paste. For brown bread, pure fine wheatmeal is substituted for the white flour.
