1,070,025. Skinning, slicing and processing fish. FISKERIDIREKTORATETS KJEMISK-TEKNISKE FORSKNINGS-INSTITUTT. June 11, 1964 [June 12, 1963], No. 24327/64. Heading A2U. In a process and apparatus for skinning and slicing pieces of fish, such as gutted, boneless and headless herring fillets without tails the skin-sides of the pieces are brought into contact with a supporting surface having a temperature below -5‹C., so that the pieces become frost-bound to said surface. The pieces are then carried, on the moving supporting surface, to a knife, which severs and detaches slices of fish from the skin, which is then scraped from the surface. In the apparatus, Figs. 1 and 2, pieces of flesh 15 are transferred from a belt conveyer 14 on to the chilled surface 16 of a clockwise rotating, hollow drum 10. The skin makes contact with the surface 16, which is preferably maintained at a temperature below -20‹C. The drum carries the pieces under a resilient roller 17, e.g. made of foamed rubber or synthetic resin, which presses them firmly on to the drum surface 16 to which they become frozen. The drum then carries the pieces to a band-knife 18, which severs slices therefrom. The severed slices drop into a bin 19. The distance between the band-knife and the drum surface 16 may be adjusted, as by moving the band-knife in either of the directions indicated by the double arrow 27. The skin portions are removed from the surface 16, by a scraping knife 20, and deposited in a bin 21. The scraping knife may be heated. The hollow drum is mounted in bearings 11 and 12. A refrigerating fluid, e.g. chilled brine or ammonia, is fed into one end of the drum, through a conduit 22 in its axle. and passes out through an upright pipe 26 and a conduit 23, passing through the axle at the other end of the drum. Stuffing boxes 24 and 25 are provided. It is stated that the process and apparatus may be used for removing heads, tails, entrails and bones from fish.
