Abstract
Menetelmä elintarvikkeiden, kuten hedelmien, marjojen ja vihannesten säilömiseksi, jonka menetelmän mukaan elintarviketta esikäsitellään nestemäisessä väliaineessa elintarvikkeessa olevien kaasujen poistamiseksi ja esikäsitelty elintarvike alistetaan ainakin 300 MPa:n paineelle entsyymien ja mikro-organismien sekä näiden osien inaktivoimiseksi. Keksinnön mukaan elintarvike saatetaan nestemäisessä väliaineessa kosketuksiin kalsiumionien ja pektiinimetyyliesteraasin kanssa alipaineessa. Infusoimalla entsyymi ja kalsium elintarvikkeen kudosrakenteeseen on mahdollista parantaa elintarvikkeen kiinteyttä ja samalla poistaa tuotteen ilma.A method for preserving food products, such as fruits, berries and vegetables, according to which the food product is pretreated in a liquid medium to remove gases present in the food product and the pretreated food product is subjected to a pressure of at least 300 MPa to inactivate enzymes and microorganisms and their components. According to the invention, the food product is brought into contact with calcium ions and pectin methylesterase in a liquid medium under reduced pressure. By infusing the enzyme and calcium into the tissue structure of the food product, it is possible to improve the firmness of the food product and at the same time remove air from the product.
