Abstract
Prevention of losses of desirable volatile flavour and aroma substances during the processing of aqueous coffee extracts from roast and ground coffee is described. The overall process for the production of soluble coffee by spray-drying of a concentrated aqueous extract is improved in that a cold coffee extract is used in an absorption column in order to absorb highly volatile coffee flavour substances and aroma compounds.
