CONSISTE EN SOMETER UN SUBSTRATO QUE CONTIENE SUCROSA A LA ACCION CONCOMITANTE DE CANTIDADES EFECTIVAS DE SOLUCIONES ENZIMATICAS DE FRUCTOSIL TRANSFERASA Y GLUCOSA ISOMERASA, PARA PRODUCIR UNA MEZCLA DE GLUCOSA, FRUCTOSA Y POLIMEROS DE FRUCTOSA, Y OPCIONALMENTE HIDROLIZAR LOS POLIMEROS DE FRUCTOSA PARA OBTENER UN JARABE DE ALTO CONTENIDO EN FRUCTOSA.
