Abstract

Procedimiento para el tratamiento de frutas para su conservación y confección de confituras, caracterizado porque esencialmente consiste en tratar en continuo las frutas por lavado o "blanqueo" a su salida de la salmuera, con por lo menos una parte del jugo azucarado recuperado después del tratamiento de precipitación, desamargamiento, decoloración eventual y desmineralización de la salmuera que ha servido para conservar las frutas que se reciba a la etapa citada de lavado o "blanqueo".
