Abstract
This invention consists of a device for processing whole citrus fruits, whereby, during the squeezing operation, the fruit is compressed radially so that its diameter is gradually reduced, making it possible to remove the skin, substantially intact, through an annular opening existing in line with the bottom of one of the squeezing vessels. In this way, the skin, which has not been split or cut or damaged by the squeezing operation, can be used for the production of candied orange skins or for other uses where a substantially intact orange skin is required.
