Abstract
Procedimiento para el ablandamiento de estructuras proteicas, rígidas o semirígidas, caracterizado por basarse en la utilización de enzimas obtenidos por fermentación de microorganismos y más concretamente, separados de cultivos de "streptomyces fradiae", enzimas que, en estado sólido o en la solución resultante de su mezcla con otros productos potenciadores adecuados, se adicionan a la estructura proteica a ablandar, en cantidades que vendrán determinadas por la actividad unitaria de tales enzimas, por su especificad para el sustrato proteico de que se trate, por el ph y tiempo de acción, por la temperatura a que se dejen actuar y por el método que se emplee para su adición al sustrato proteico, así como por la propia constitución de éste, por su grado de dureza y por el ablandamiento que se desee obtener con el tratamiento.
