Abstract
Procedimiento para preparar un pastel alimenticio, caracterizado porque comprende incorporar una sustancia proteínica de albumen, batida hasta estar firme, en un alimento de consistencia líquida, mientras se agita el alimento a una temperatura suficientemente alta para causar la coagulación de la sustancia proteínica a medida que se incorpora, al objeto de conferir una estructura esponjosa a la mezcla resultante.
