Abstract

The steam generator (1) for a commercial gas cooker includes a water reservoir (2) with a sealed, watertight body (2a), a gas burner (3) and a heat exchanger (5) immersed in the reservoir. The heat exchanger is in the form of parallel tubes (5a) which carry hot water and are open at both ends. A cylindrical chamber (9) adjacent to the reservoir carrying the electrodes (19) is used to control the water level (2c) and at least one temperature sensor (10, 12) of the liquid bulb type to indicate the presence of a deposit of undesirable lime is mounted on the heat exchanger from the outside of the generator through the body (2a).
