Abstract

Полутвердый пищевой концентрат в виде геля или пасты, включающий солечувствительную камедь, соль в количестве, достаточном для поддержания солечувствительной камеди в высоленном состоянии, солеустойчивый структурирующий материал в количестве, эффективном для получения полутвердого пищевого концентрата, и воду, причем этот полутвердый пищевой концентрат после разведения в водной жидкости, которой является вода, дает готовый к употреблению конечный продукт, включающий от 0,1 до 2,5 мас.% соли и от 0,01 до 3,5 мас.% солечувствительной камеди, при этом готовый к употреблению конечный продукт обладает вязкостью более 15 мПа∙с при 20°С, а солеустойчивая гелеобразующая система не представлена одним лишь конжаковым маннаном.
