Die von Unreinigkeiten befreiten Cacaoschalen werden in weichem Wasser (ohne oder mit Zusatz von Schwefelsäure) eingequellt. Nach Verlauf mehrerer Tage wird die Quellflüssigkeit entfernt, die Schalen werden ausgesüfst und mit ; starker (35 pCt.) Aetznatronlauge behandelt.
