Gegenstand vorliegender Erfindung . ist ein Verfahren zur Klärung von Wein, Bier u. dgl. unter Vermeidung der Zuführung solcher organischer Stoffe, welche in diesen Flüssigkeiten selbst Fäulnifserreger sein können. Dieses neue Verfahren bewirkt gegenüber den bekannten Verfahren den Klärungsprocefs mit einer Ersparnifs von 2/3 der üblichen Zeit und macht Zusätze solcher , Körper möglich, welche dem Wein erfahrungsgemäfs durch jede Klärung genommen werden, jedoch zur Haltbarkeit desselben unbedingt nöthig sind.Subject of the present invention. is a method for clarifying wine, beer and the like while avoiding the addition of organic substances which can themselves be putrefactive agents in these liquids. Setzt man etwas von dieser Lösung dem zu klärenden Wein in der üblichen Weise hinzu, so bleibt sie zunächst, ähnlich wie andere Klärungsmittel, scheinbar in Lösung, allmälig erfolgt indefs unter dem Einflufs des Alkohols und anderer Bestandtheile eine Ausscheidung, welche als Niederschlag zu Boden geht, d.i. der Wein »körnt« bezw. »streicht«.One falls from the skimmed milk in a known manner, for. Ein weiterer Vortheil dieses Mittels besteht darin, dafs es Zusätze verträgt, welche durch die Klärung erfahrungsgemäfs dem Wein, Bier u. s. w. entzogen werden, wie z. B.
