Demgemäß sind es in der Hauptsache die verschiedenen hydrophilen Kolloide in einer wäßrigen Lösung, die sich für diesen Zweck als geeignet erwiesen haben. Gelatine ist bisher in weitem Umfang benutzt worden, da damit kolloide wäßrige Lösungen gebildet werden können, in denen die vitaminaktiven Substanzen leicht löslich oder leicht dispergierbar sind. Diese Lösungen sind selbst bei einem hohen Wassergehalt imstande, ein Gel vor dem Abziehen des Wassers zu bilden.
