Diese Schicht soll verhindern, dass die Kohlensäure frühzeitig aus der Flasche entweicht und das Produkt nicht mehr verkäuflich ist. Bei einer tieferen Schergeschwindigkeit fehlt die Barriereschicht, bei einer höheren, „optimierten” Schergeschwindigkeit ist sie vorhanden.
