市场上的榨汁机结构多样，但主流的产品是螺杆式榨汁机，目前的螺杆式榨汁机主要由网孔筒和螺杆构成，螺杆的螺旋外径从螺旋起点往螺旋终点逐渐变小，螺杆插进网孔筒内，网孔筒中部为封闭的壁体，上部和下部为带过液孔的网壁，传统的螺杆由主体及主体外壁上的螺纹构成的，螺纹从主体的外壁顶部一直盘旋至底部，工作时，螺杆转动，推动倒进来的水果往网孔筒下部移动，逐渐挤压水果，挤压的前期，从水果中挤出的汁液从上部网壁流出，到了挤压的后期，即在螺杆螺旋的末端，螺杆与网孔筒对水果的挤压力达到最大，水果中剩余的汁液在此处被挤压出来，然后经下部网壁流出，采用这种螺杆榨汁，完全靠螺杆推动挤压的方式来压取汁液，由于水果没有被细磨，水果中的汁液难以被完全挤压出来，水果榨中会残留部分汁液，导致浪费。
