技术领域
本发明涉及一种有壳食品的生产方法及设备,特别是涉及一种将原料入模具后,被调整过温度的冲头轧入其中,将多余的原料挤出模具口的有壳食品的生产方法及设备。
背景技术
现有技术中,德国申请号:197 20 844 C1中描述了一种有壳食品的生产方法及设备,其是该外壳通过调整过温度的冲头冲挤而得,其间,食品周围空气的露点始终保持在冲头温度以下。
用这种方法不能精确地确定巧克力泥,使批量生产的产品(Confiserieprodukt)的表面和模具口相连,而且表面也不光滑平整。因此一般在模具中加入较多的原料用以造出多余的原料。而为了使批量生产的产品表面光滑又必须将多余的外延分离。
又根据德国申请号:589 820 B1,其可以把边沿这样分离,用一把刀从侧面入手并沿着模具的上表面将多余的原料刮掉。这种方法有个缺点,比如原料泥温度较高时表面上部不能被刮掉而是会融化。如果原料泥太冷,表面的上部会裂开因而不光滑。
还有美国申请号:1 647 944中也提到一种批量生产的方法,每个冲头都安装有剪切翼。这个剪切翼在批量生产的同时进入多余的原料中。当批量生产的产品变冷后,冲头带动剪切翼转动切除上边沿。
由此可见,上述现有的有壳食品的生产方法及设备在结构、方法与使用上,显然仍存在有不便与缺陷,而亟待加以进一步改进。为了解决有壳食品的生产方法及设备存在的问题,相关厂商莫不费尽心思来谋求解决之道,但长久以来一直未见适用的设计被发展完成,而一般产品又没有适切的结构能够解决上述问题,此显然是相关业者急欲解决的问题。
发明内容
本发明的主要目的在于,克服现有的有壳食品的生产方法及设备存在的缺陷,而提供一种新的有壳食品的生产方法及设备,所要解决的技术问题是使其用一种简洁的办法将多余的原料与产品分离,以此得到绝对光滑的产品表面,从而更加适于实用,且具有产业上的利用价值。
本发明提出一种有壳食品的生产方法及设备,为了解决这些问题,将多余的原料通过冲头在模具口与壳分离。这说明,当冲头进入模具腔时多余的原料被挤出模具口,并将其于巧克力壳分离。在冲头下降的最后阶段,巧克力泥因受压力而在模具腔内成型。可以保证巧克力泥贴紧冲头表面的每一个边缘和角落,这样制成的内外表面绝对光滑。
多余的原料已经与壳分离,这样就可以用任意一种手段将其分离,同时不影响产品。最好是用适当的工具,比如一把刮刀或者小刀将多余的原料从模具口分离。虽然涉及到颜色和混合的问题,但是由于这把刀只能接触到多余的原料而不能接触到产品本身,所以对于不同的巧克力泥可以用同一把刀。
当然还有其他的分离方法也是可行的。比如扭动模具使得多余的原料自行脱落。还有震动也是可行的。所有这一类的可能性都包含在本发明的构思之中。
根据该方法的一个实例,多余的原料被从产品上扎除,也就是说,与模具口接触的冲头的外沿是平面的。这个平面只要0.5mm到1mm就满足要求。甚至可以类似于一个环状切刀,这样多余的原料就不是被扎除,而是被切除。
在本发明的另一个实例中,冲头和模具口共同构成一个接收多余原料的开口空间。模具口上面的冲头口表面有一个斜面就是为了达到这个目的。这就可以保证多余的原料不会流出模具太远,而且与模具的接触面积不会太大。即使多余的原料在开口空间中形成一大块,接触面积也很小,这样就减小了多余原料的冲击。
冲头表面对着模具内壁的地方还有一个斜面,它是冲头的一个过渡部分。这个斜面最好是45°角。它还使得产品边缘处于有个斜坡,这样就对在将来产品壳内填充完原料之后要加的盖子制造了一个较大的结合面。
磨具以及模具腔和冲头的几何尺寸不是很重要。所有的几何尺寸都在本发明的思想范围之内。
磨具还可以是一个多模模具或者单模模具甚至双模模具,比如生产有两部分组成的巧克力蛋时用的模具。
上述说明仅是本发明技术方案的概述,为了能够更清楚了解本发明的技术手段,并可依照说明书的内容予以实施,以下以本发明的较佳实施例并配合附图详细说明如后。
本发明的具体结构及其方法、制造方法、加工方法由以下实施例及附图详细给出。

具体实施方式
为了更进一步阐述本发明为达成预定发明目的所采取的技术手段及功效,以下结合附图及较佳实施例,对依据本发明提出的有壳食品的生产方法及设备其具体实施方式、结构、方法、步骤、特征及其功效,详细说明如后。
图1中是巧克力壳1(见图2)的多模模具2生产设备,其中模具3.1和模具3.2连在一起。模具3.1和模具3.2组成储存巧克力泥的模具腔4。调整过温度的冲头5进入模具腔4中,冲头表面6通过上部斜面8和模具口7相接,并延伸至外沿9。按照图1中生产巧克力壳1的情况,外沿9平压在模具口7上。
外沿9延伸到斜面10,它和模具口7一起构成了一个开口空间11。
冲头5和其他冲头一起安放在一个托架12中。在托架12中以及在一定情况下在冲头5中设有一个管道13用来通过冷媒。
请参阅图2可进一步说明该发明的工作原理:
在步骤a)中,将巧克力泥14注入模具腔4,冲头5处于模具腔4的正上方。
在步骤b)中,冲头5下降,此时冲头表面6进入模具腔4,上部斜面8也是如此。这样多余的原料15被从模具腔4中挤压至模具口7上。在冲头5下降的最后阶段,外沿9接触到模具口7并将多余的原料15于巧克力壳1剪开。在一个由斜面10和模具口7构成的一个空间11存留着这些多余的原料15。
在步骤c)中,冲头5又被提起。巧克力壳1由于接触过被降过温的冲头5而成型,并停留在模具腔4中。同样,多余的原料15留在模具口7上,此时整个模具3被优先冷却。
在步骤d)中,用任意一个工具16将多余的原料15从模具3上刮去。任意一个工具16可以是一个刮刀,抹刀,或者类似的刀具。在某些情况下,只要模具3震动一下也就够了。
也可以把模具3倒置后将巧克力壳1从模具腔4中倒出或者取出。一般情况下壳的内部会被填充,并最后被加盖封口。这个盖子紧贴上部斜面8,正是由于这个上部斜面才使得盖子平整地紧贴壳1,这样就有了一个很好的粘贴面。
请参阅图3,显而易见冲头5.1外沿有一个切刀17。如果冲头是圆形的,就会有一个环形的切刀。这样多余的原料15就不是被轧掉而是被分离。这样的分离精确到模具口7和模具腔4之间的过渡边缘上。
如果要制造巧克力蛋可以使用图4中的单模模具3.1。许多单模模具3.1通过网格连在一起。这些单模模具3.1的模具口7.1是斜的,它和模具腔造成了一个锋利的边缘18。当外沿9接触锋利的边缘18时,多余的原料15就相当于被剪去。

1、一种有壳食品的生产方法,将原料入模具(3)后,被调整过温度的冲头(5,5.1)轧入其中,将多余的原料(25)挤出模具口(7,7.1),其特征在于:多余的原料(15)将由冲头(5,5.1)在模具口(7,7.1)与壳(1)分离。
2、根据权利要求1所述的有壳食品的生产方法,其特征在于其中所述的多余的原料(15)被从壳(1)轧掉。
3、根据权利要求1所述的有壳食品的生产方法,其特征在于其中所述的多余的原料(15)被从壳(1)切掉。
4、根据权利要求1至3所述的方法之一的设备,其特征在于,冲头(5,5.1)具有外沿(7,7.1),它在冲头(5,5.1)进入原料(15)之后接触或者平压模具口(7,7.1)。
5、根据权利要求4所述的设备,其特征在于其中所述的外沿(9)平压在模具口(7)上。
