After incubation of trypsin with BODIPY fluorescent casein substrate for one hour at room temperature with or without the addition of test substances, the fluorescence was measured (excitation wavelength 485 nm, emission wavelength 530 nm) by SpectraMax® Gemini microtiter plate reader (Molecular Devices Corporation, Sunnyvale, CA), using Softmax ( R) Pro 3.0 software (Molecular Devices Corporation). Each experiment was carried out in triplicate, and each experiment was performed twice.

Example F is a soymilk powder obtained by mixing soybeans with water, heating the mixture overnight, and adding ethanol (Flavosterone from Ichimaru Pharcos CO., Ltd, Gifu, Japan). Example G is a soybean protein extract (Vegeseryl HGP LS 8572 from Laboratories Serobiologiques S.A., Pulnoy, France). All of these soybean products were compared with soybean trypsin inhibitor (STI) (Sigma).

Therefore, glutathione is the main endogenous antioxidant with high responsiveness to environmental changes, can regulate skin tone and wrinkles, and can be used to deal with exogenous aggressions.

Fluorescence measurements were made using a CytoFluor (R) fluorescence plate reader (PerSeptive Biosystems, Framingham, MA, USA) under the following filter conditions: excitation wavelength 360 nm, emission wavelength 460 nm.
