Abstract
本发明公开一种食疗保健醋。该保健醋由下述用量(重量)的组分组成:糠麸粗杂粮90-94%、可食用植物药6-10%、糖化酶及醋酸菌种微量。将用于酿造食醋的糠麸粗杂粮原料粉碎、混料、蒸汽加热冷却至25-35℃后,加入粉碎的天然可食植物药、糖化酶及醋酸菌种,搅拌、发酵,利用自然发酵所生成的醋酸摄取糠麸粗杂粮的营养成分和天然可食植物药中的有效药物成分,淋醋制得。该保健醋富含对人体有益的营养成分和药物成分,具有食疗保健作用。
Description
(一)技术领域:
本发明属于保健饮品技术领域,主要涉及的是一种制备食疗保健醋的方法及用该方法生产的食疗保健醋。
(二)背景技术:
自然界里生长着许多取之不尽、用之不竭、品种繁多的植物。人类在漫长的生活中选择了与生命密切相连的植物,培育成粮食作物和经济作物,为人类的生存和繁衍后代提供必要的营养物质。然而大自然赋予人类生命所需的一切,但人类自身并没有很好地利用反而逐渐加以破坏,因此,许多疾病提前发生,新疾病不断出现。就近几十年利用的食物资源来看,细粮精制、粗粮不吃、糠麸弃之。人们从摄取的蔬菜、水果中也受着农药、化肥的伤害,甚至连牲畜、家禽也因施用对人体有害的类激素肥剂失去了往日的本色。真正维持生命运动的营养物质在粮食精加工及种植养殖中绝大部分被丢失或污染了,使人体正常生理需求失衡而导致疾病发生。于是,人类又向自然界索取治病的植物——药材,食物和药物都来源于植物,“药膳同源”深刻地反映了人与自然和谐统一。
那么,如何有效地把食物中的营养成分和药物中的有效物成分有机地结合起来,进行转化和组合,一直在困惑着人们。在长期的实践中发现,自然酿造生成的醋酸可解决这一难题。醋作为一种食用调料品在我国有着悠久的历史,在长期的食用过程中,其自身所具有的杀菌解毒作用以及其它特性已逐渐被人们所认识。民间就有用醋浸泡黑豆食之治疗心血管方面疾病的说法。由于现有的食醋是一种单纯的调料品,讲究的是风味和口感,选用的原料是单一的经过精加工的大米或糯米或小米等,主要成分是用于生成醋酸的糖类和淀粉,因而所含营养成分较少。而食醋中的主要成分醋酸所具有的调节人体机能的特性还未引起人们的足够重视,更谈不上加以充分利用。
(三)发明内容:
本发明的目的即由此产生,提出一种制备食疗保健醋的方法及用该方法生产的食疗保健醋。利用该方法生产的食疗保健醋富含对人体有益的多种营养成分和药物成分,具有食疗保健作用。通过饮用可起到提高人体免疫功能、增强机体新陈代谢功能、缓解慢性病患者痛苦、消除因环境污染及摄取营养不均衡给人体带来的疾病隐患。
为实现上述目的,本发明是通过以下技术方案实现的:
制备食疗保健醋的方法:将用于酿造食醋的糠麸粗杂粮原料粉碎、混料、蒸汽加热冷却后,加入粉碎的天然可食植物药、糖化酶及醋酸菌种,搅拌均匀,发酵,利用自然发酵所生成的醋酸摄取糠麸粗杂粮的营养成分和天然可食植物药中的有效药物成分,淋醋制得。
食疗保健醋:主要由下述用量(重量)的组分组成:糠麸粗杂粮90-94%、可食用植物药6-10%、糖化酶及醋酸菌种微量。
本发明所述的糠麸粗杂粮原料非常广泛,如玉米、小米、麸皮、米糠、薯类等,富含人体所需的多种营养成分。例如,糠麸中存在大量的易溶于水的维生素。如B族,B1、B2、B6、叶酸、烟酸、泛酸、Vp、生物素、对氨基本甲酸、胆碱、肌醇及氨基酸和矿物质;玉米含有植物性蛋白质、脂肪、糖类、维生素、矿物质Ca、P、Fe、Mg及亚油酸、胡萝卜素,VE和谷胱甘肽等高级营养素。谷胱甘肽被誉为“长寿因子”,是一种含Se有机化合物,其抗氧化作用比被称为“抗衰老剂”的VE高出许多倍。但是,单靠糠麸粗杂粮的营养要素还远远不够,更何况由于农药化肥的施用,土地水源的污染,这些糠麸粗杂粮在生长过程中也不同程度受到污染,营养成分也有所下降。为此,本发明还选择了没有受到环境污染的自然界生长的可食用植物药上。利用自然酿造食醋生成的醋酸来摄取糠麸粗杂粮中的营养成分和植物药中的有效药物成分,再应用醋酸具有杀菌解毒、调理诸药的性能,把药物成分转化为对有益于人体健康的营养成分,起到加强营养的辅助效果。这些可食植物药的选用范围非常广泛,按食疗保健效果可分为以下几类:
1、扩张血管、增强血管弹性、促进血液循环的:可选用桂枝、肉桂、荆芥、紫苏、姜、葛根、连翘、玄参、防己、银杏叶、槐花、川芎、钩藤、黄氏、桑寄生、杜仲、麻黄根等可食用植物药。此类药物中的银杏叶对改善大脑供血不足、刺激大脑血液循环、防止自由基对大脑的损害以及治疗高血压冠心病等方面有显著效果;槐花、连翘、黄芪等具有改善血管弹性、预防脑血管破裂的效果;生姜既是食品,又是药物,含有蛋白质、维生素、胡萝卜素、硫胺素、核黄素、尼克酸、抗坏血酸等各种维生素以及矿物质K、Ca、Mg、Fe、Mn、Zn、Cu、P、Se等元素,还含有姜辣素,挥发油及各种氨基酸。姜中的挥发油能使血液得到稀释,流动更加畅通,向大脑提供更多的氧气和养分。长期食用生姜会使人的思维变得敏捷聪明。德国的“彩色画刊”杂志将生姜列为“有助于激发人创造性”的食品。生姜还能健脾胃、促消化。近年来英、德、日、荷等国家科学家发现并证实了生姜能大大降低血液中的胆固醇、防止动脉硬化形成,并能在一定程度上抑制癌细胞的扩散。
2、降低胆固醇的:可选用生姜、绿豆、山楂、甘草、首乌、杜仲、泽泻、大蒜等可食用植物药。此类可食用植物药中,大蒜至少有400种化学物质,具有较强的杀灭多种多样细菌的功能。能降低血压和血液中的胆固醇,抑制血液凝聚。其含有大量的肾上腺素,可以使血管平滑肌扩张;含有的多种自由基物质,可保护细胞不受自由基伤害,防止身体早衰。
3、降血压、降血脂及预防动脉硬化的:可选用菊花、姜黄、山扼子、夏枯草、决明子、白蒺藜、泽泻、防己、车前子、马兜玲、桑白皮、地榆、川红花、地龙、五味子、羊藿、兔丝子、黄精、肉苁蓉、酸枣仁等食用植物药。此类植物药中的黄精能益精补血、健骨壮阳,具有降血压及降血糖作用,还能增加冠状动脉血流量,降低血脂和延缓动脉粥硬化等作用,其含有丰富的植物性脂肪、蛋白质、多种氨基酸、淀粉等,还含有天门冬氨酸、毛地黄糖甙及蒽醌类化合物等活性成分,具有优良的补中益气作用,适于脾虚乏力、食欲减适、肺燥干咳、肾虚、腰膝酸软及头晕等症。姜黄主要成分是姜黄酮、姜烯、姜黄素等,具有与可的松相同的抗炎活性。试验证明,它可以降低胆固醇、阻止血小板聚集(血凝),促进胆汁分泌,增强胰岛素活性、降血糖;还能保护肝脏免受毒素损伤,增强胃壁对胃酸的防御能力。
4、防治糖尿病的:可选用姜黄、葛根、天花粉、玄参、地骨皮、肉桂、桂枝、泽泻、枸杞、黄精等可食用植物药,此类植物药均具有激发和调动胰岛素的活性,逐渐恢复胰岛素对糖代谢功能。
5、补肾壮阳益精血的:可选用防己、川芎、钩藤、麻黄根、五味子、黄芪、甘草、杜促、肉苁蓉、滛羊藿、兔丝子、黄精、首乌等可食用植物药。
6、养血乌发的:可选用黄精、首乌、熟地、桑椹、黑芝麻、黑豆等食用植物药。
上述所用的各类可食用植物药,其药理特性及营养要素在各种中医词典中均有详细记载,在此就不再一一赘述。
这些植物药中对改善心脑血管、保护胃肠道、泌尿系统、生殖系统及提高免疫功能的主要药物成分有甾族化合物,如麦角甾醇、雌激素及肾上皮质腺素等,这些药物成分对提高免疫力、增强性功能、壮筋骨很有效果;糖甙类如芸香甙、皂甙、黄酮甙、连翘甙等,能改善心脑血管弹性、降低或改善胆固醇、甘油三脂等类物质、生物硷(即叔胺类),类似氨基酸、蛋白质成分,对人体各功能代谢起着积极的作用,植物性挥发油对刺激胃肠分泌,增强肠道蠕动功能,增强食欲促消化十分有益。
本发明完全采用纯天然原料,不加任何人工合成色素、添加剂及防腐剂,对人体没有任何毒副作用。含有丰富的氨基酸、多种维生素等。饮用后,其保健功效就表现在它能与种种氨基酸、维生素及无机微量元素互溶,相互协调、相互转换,促进人体代谢功能,起到修复组织,恢复脏腑功能的作用。另外,其与人体唾液的酸碱度十分相近(唾液PH=1.5-1.8;本发明PH=1.5-2.0)。众所周知,唾液是消化、吸收食物营养成分的重要物质,中老年人唾液分泌减少,消化、吸收功能衰退,很多营养物质不能被吸收,引起人体脏腑功能萎缩,抵抗力下降、衰老速度加快。本发明所选用的强胃健脾植物药,如生姜、姜黄、桂枝、肉桂、陈皮等,能刺激唾液分泌,从而起到唾液帮助消化、吸收食物营养成分的功效。
本发明的综合保健效果表现在以下三个方面:一是营养素进入人体后,各功能机体分别根据自身需要及时摄取营养物质;二是对慢性疾病患者疾病患者能及时提供有效药物,食、疗健身;三是向体内提供合成某些有效物质的原料。比喻卵磷脂是由甘油、脂肪酸、磷酸、胆碱和多种微量元素组成的螯合体,对人体非常有用,体内可以自行合成。
本发明的主要生理功能如下:
1、保护细胞:细胞是组成人体的最小单位。维生素B6和叶酸,是制造核酸(去氧核酸DNA和核糖核酸RNA)的主要物质,VB2能促进细胞再生和发育;患巨细胞贫血病的人是因缺乏叶酸;卵磷脂和VE是保护细胞膜的有效物质;Vc是细胞与细胞的连接剂,具有这些营养素细胞就不会受到伤害,恶性肿瘤和癌细胞病变就不会发生。
2、强身健脑:色氨酸和苯丙氨酸是一种传递与神经细胞之间来往的化学物质,对改善记忆力,提高思维敏捷度、解除郁抑情绪,促进睡眠有很好的效果。在VB6、叶酸和Mg的参与下效果最佳;精氨酸是维持脑下垂体正常功能所必需的物质,尤其是男性,精液中80%是由精氨酸组成,它能使肌肉变得更强壮,更有活力;VB1、E、C、B6及Ca能有效形成脑细胞活动必要的功能,防止脑细胞氧化、消除脑疲劳。
3、提高免疫力:生长激素是一种提高免疫功能的氨基酸复合体,是由精氨酸、乌氨酸、半胱氨酸及Ve、A、C、Se等组成的免疫系统功能物质。本保健醋中富含多种氨基酸,因而提高人体免疫力。
4、对抗自由基:能够防止细胞、血液、器官等组织不受氧化的物质,统称抗自由基物质。许多疾病都是自由基对细胞的氧化引起的。实验证明,Vc、E和β-胡萝卜素是阻止自由基向细胞进攻的极为有效的物质,三者联合使用效果最佳。谷胱甘肽是一种抗氧化的含Se有机化合物,它能对人体内的每个细胞、器官和组织实施着全面的保护,人体内都有这种物质,只是多少不同。在Vc、E或者谷酰胺的存在下,在体内能自行合成。许多微量金属元素都是抗自由基物质,如Cr、Mn、Cu、Zn、Se等,每一种植物或药物里都有几种甚至十几种抗自由基物质,大蒜就含有400余种成分、几十种抗自由基物质。
5、调节血液酸碱平衡:维持体内血液酸碱平衡,可以防御很多疾病。血液正常PH=7.4,呈弱碱性,吃过多动物性食品,血液偏酸性,容易得病,多吃植物性食品血液偏碱性,不易得病,醋属于植物性碱性食品,经过代谢呈弱碱性,多食能调节血液酸碱平衡。
6、降低胆固醇:胆固醇是组成人体细胞的营养物质,大脑神经血管最丰富,胆固醇含量较多,亦最容易出问题。降低和改善胆固醇有三种方法:一是多吃纤维素丰富的食品。肝脏能将胆固醇变成胆酸送到小肠帮助消化,然后胆酸又回到肝脏变成胆固醇,当小肠里纤维素丰富时,纤维素在小肠里形成胶状物质将胆固醇包围,胆固醇再也回不到肝脏去了,随着消化道排出体外;二是经过抗自由基物质将低质量胆固醇变为高质量(或低密度变为高密度);三是胆碱等维生素将胆固醇进行乳化或分解后排出体外。
7、降低血压:由于不良胆固醇脂类很容易沉积在血管壁上,血管变得狭窄,血液流通受阻,血管弹性减退而引起血压升高。本发明中富含的多种维生素C、烟酸、叶酸及糖甙类化合物都具有软化血管、乳化或溶解沉积在血管壁上脂类物质,使血液流通顺畅,恢复血管弹性、降低血压。
8、降血脂:血液中的胆固醇、甘油三脂、脂蛋白等脂类由于受到氧化,质量变得低劣,使血液粘稠度增加。本发明中的VB2可使血液中受氧化的脂类分解;Vc、E能提高血液中抗自由基的能力,使各种脂类维持良性状态,血液粘稠度就能保持在正常范围内。
9、防治糖尿病:糖尿病就是血糖过多,胰腺不能分泌胰岛素,胰岛素不足或无效时,就不能对葡萄糖产生作用,形成糖尿病。本发明含有的丰富B族维生素,如B1、B2或B6及VE等,VB1、B2可以将糖、脂肪转化为体能;VB6能促使胰岛素分泌量增加,VE能预防糖尿病引起的并发症。
本发明饮用方法如下:
慢性疾病患难与共者,一般分为三个步骤。
第一,疗效期:5-7天,日服三次,每次一两,饭后饮、睡前饮。
第二,巩固期:血压、血稠正常时,只是病情得到控制,一旦停服,又会反复,不稳定,日服二两,早晚各一次,坚持一个月,巩固疗效。
第三,保健期:慢性病人多数体质较差,身体各功能衰退,恢复起来时间要长,最好长期饮用,日饮一至一两半。
本发明从三年几百例慢性疾病患的临床试验表明,有效率在90%,治愈率高达70%,凡是连续饮用一个月的慢性疾病患者,均有减轻症状或康复的效果。
典型病例:
病例1:张松山,男,54岁,本市某公司总工程师,患高血压病多年,血压160/100,居高不下,眼角周转发紧,经常头晕、睡意浓,没有精神,药物不离身,稍有不慎,血压升高。99年开始饮用保健醋,其他降压药物全部停用,日饮三两,每次一两,半月后血压120/85,恢复正常,其他症状消失,体重由182斤降至165斤,很有精神,两年来没有复发。
病例2:张新团,女,42岁。患高血压、血稠、下肢浮肿、上肢疼痛达5年之久,天天吃药,时好时坏,体重195斤,饮醋15斤,症状全部消失,血压、血稠正常,体重降至175斤。
病例3:胡凤英,女,75岁。偏瘫后遗症7年,脖子发硬,不能扭动,行走不便,饮醋10斤,脖子能扭动,走路也利索多了。
病例4:王孟莲,女,51岁,先患低血压,后变成高血压,头晕,全身游动性串病,经常打吊针吃药,效果不明显,周期性复发,饮醋5斤后,症状减退,血压恢复正常。
病例5:某干部,男性,后背长癣,久治不愈用该醋擦抹后,后背癣消失。
(四)具体实施方式:
实施例1
取90%的糠麸粗杂粮原料粉碎、混料、蒸汽加热1小时,冷却至25℃后,加入10%的天然可食用植物药(粉碎)、微量糖化酶及醋酸菌种,搅拌均匀,发酵,在自然发酵食醋的过程中生成的醋酸就可充分摄取出糠麸粗杂粮及植物药中的有效成分,再按传统工艺淋醋、灭菌制得食醋。
本实施例所选用的糠麸粗杂粮可为玉米、小米、麸皮、糠、红薯等,用量(重量)分别为:玉米40%、小米35%、红薯、面粉9%、大米糠、麸皮16%。
本实施例所选用的天然可食用植物药可分为治疗保健心脑血管方面的植物药,如桂枝、荆芥、生姜、银杏叶、槐花、连翘等,用量(重量)70%;治疗保健泌尿系统方面的植物药,如黄芪、桑寄生、泽泻、山扼子、黄岑、益母草、车前子,用量(重量)20%;治疗保健胃肠系统方面的植物药,如:桂枝、生姜、藿香、山楂、桔梗、桔梗、陈皮、积实等,用量(重量)10%。
为适应大多数人的口感需要,本实施例可加入微量蜂蜜。
实施例2
取94%的糠麸粗杂粮原料粉碎、混料、蒸汽加热1.5小时后,冷却至35℃后,加入6%的天然可食用植物药(粉碎)、微量糖化酶及醋酸菌种,搅拌均匀后,装缸发酵,其它过程同实施例1。
本实施例所选用的糠麸粗杂粮为玉米、小米、面粉、麸皮,,用量(重量)分别为:玉米50%、小米30%、面粉6%、麸皮14%。
本实施例所选用的天然可食用植物药,分为三类,第一类为银杏叶、枸杞、山楂、麦芽、甘草、槐花、菊花、绿豆、姜、大蒜、黑芝麻、肉苁蓉、兔丝子,各250克,占40%;第二类为小茴香、花椒、胡椒、肉桂、桂枝,各50克,占4%;第三类为黄精、桑椹、桑寄生、肉苁蓉、杜仲、兔丝子、麻黄根、五味子、滛羊藿、首乌、熟地、党参、黄芪、川芎、酸枣仁、益母草、女贞子、川红花、当归、马兜玲、山扼子、泽泻、防己,各100克,占56%。
Claims (2)
1、一种制备食疗保健醋的方法,将用于酿造食醋的糠麸粗杂粮原料粉碎、混料、蒸汽加热冷却后,加入粉碎的天然可食植物药、糖化酶及醋酸菌种,搅拌均匀,发酵,淋醋制得保健醋;其中所述的糠麸粗杂粮的用量为重量百分比90-94%、可食用植物药的用量为重量百分比6-10%、糖化酶及醋酸菌种微量;糠麸粗杂粮的各成份及用量分别为占糠麸粗杂粮原料总量的重量百分比为:玉米40%、小米35%、红薯9%、麸皮16%。
2、一种用权利要求1所述的方法制得的食疗保健醋,其特征在于:所述的天然可食用植物药为桂枝、荆芥、生姜、银杏叶、槐花、连翘、黄芪、桑寄生、泽泻、山扼子、黄岑、益母草、车前子、藿香、山楂、桔梗、陈皮和积实。
