Abstract
本发明提供了一种富锌油茶籽油高效制备工艺,具体步骤如下:(1)油茶籽的选择;(2)温度梯度干燥和壳仁比调控进行油茶籽压榨处理:油茶籽先90℃‑105℃处理10‑30分钟,然后60℃‑75℃烘至水分5%‑10%,脱壳油茶籽并调壳仁比至20%‑50%,压榨毛油过滤;(3)柠檬酸‑饱和食盐水耦合低损脱胶:压榨后将过滤毛油泵至脱胶罐,加入油量0.05%‑0.2%重量比的45%‑55%重量比的柠檬酸于40℃‑70℃处理45‑90分钟,升油温至60℃‑80℃,加入油量5%‑15%重量比的70℃‑90℃食盐水水洗2次,脱水干燥至油表面无汽泡。本发明的有益效果为:以油茶籽为对像,通过控制油茶籽品质和制油工艺,建立富锌油茶籽油高效制备工艺,具有能耗低、油茶籽油损耗小、营养损失少、品质优等特点。
Description
技术领域
本发明涉及富锌植物油领域,主要是一种富锌油茶籽油高效制备工艺。
背景技术
锌是人体必需的微量元素,其不能在体内合成,只能靠食物来供给。锌在促进人体发育、增强免疫力,维持人体正常食欲等方面起着重要作用。缺锌会导致多种病症,尤其是对儿童、老人及孕妇等人群产生不良影响。植物油是人类日常生活的必需品,是人体营养物质的重要来源,通过摄取优质食用植物油来调节营养元素的不足是保障人体健康的重要手段。
油茶是我国特有的木本油料植物,研究表明,其具有富锌作用。油茶籽油是一种优异的食用植物油,不饱和量脂肪酸含量超过90%,尤其是油酸含量达80%左右,作为一种高档植物油广泛关注。油茶籽主要通过蒸炒压榨制取毛油,并进一步通过脱胶-碱炼-脱色-脱臭-冬化等精炼工艺以达到国家一级食用油要求。我们发现,精炼过程中,生育酚等脂肪伴随物、锌等营养元素损失20%-50%以上,影响了油茶籽油的营养价值。
发明内容
本发明是为了克服油茶籽油传统制备工艺中锌元素损耗大的问题,而提供一种富锌油茶籽油高效制备工艺。
本发明的目的是通过如下技术方案来完成的。一种富锌油茶籽油高效制备工艺,在控制油茶籽品质(酸价、过氧化值)的基础上,应用温度梯度干燥-壳仁比调控技术进行油茶籽压榨处理,降低油中胶质含量和色泽,应用柠檬酸-饱和食盐水耦合低损脱胶技术,建立富锌油茶籽油高效制备工艺,具有能耗低、油茶籽油损耗小、营养损失少、品质优等特点。具体步骤如下:
(1)油茶籽的选择:选完全成熟、籽粒饱满且油脂酸值不超过2mgKOH/g,过氧化值不超过10mmol/kg的油茶籽;
(2)温度梯度干燥和壳仁比调控进行油茶籽压榨处理:油茶籽先90℃-105℃处理10-30分钟,然后60℃-75℃烘至水分5%-10%,脱壳油茶籽并调壳仁比至20%-50%,压榨毛油过滤;
(3)柠檬酸-饱和食盐水耦合低损脱胶:压榨后将过滤毛油泵至脱胶罐,加入油量0.05%-0.2%重量比的45%-55%重量比的柠檬酸于40℃-70℃处理45-90分钟,升油温至60℃-80℃,加入油量5%-15%重量比的70℃-90℃食盐水水洗2次,脱水干燥至油表面无汽泡。
更进一步的,在步骤(3)后,进行冬化脱腊精滤。

具体实施方式
下面将结合实施例对本发明做详细的介绍:
本发明提供了一种富锌油茶籽油高效制备工艺,具体步骤如下:
(1)油茶籽的选择:选完全成熟、籽粒饱满且油脂酸值不超过2mgKOH/g,过氧化值不超过10mmol/kg的油茶籽;
(2)温度梯度干燥和壳仁比调控进行油茶籽压榨处理:油茶籽先90℃-105℃处理10-30分钟,然后60℃-75℃烘至水分5%-10%,脱壳油茶籽并调壳仁比至20%-50%,压榨毛油过滤;
(3)柠檬酸-饱和食盐水耦合低损脱胶:压榨后将过滤毛油泵至脱胶罐,加入油量0.05%-0.2%重量比的45%-55%重量比的柠檬酸于40℃-70℃处理45-90分钟,升油温至60℃-80℃,加入油量5%-15%重量比的70℃-90℃食盐水水洗2次,脱水干燥至油表面无汽泡。
(4)、进行冬化脱腊精滤。
实施例1:取油茶籽100公斤,于105℃处理10分钟,60℃烘至水份6%。脱壳并调壳仁比至约35%,压榨后将过滤毛油泵至脱胶罐,升油温到55℃,加入油量0.2%的52%柠檬酸水洗1次,升油温至80℃,加入油量5%的85℃食盐水洗2次后,90℃脱水干燥后冬化脱腊,精滤,即为成品油。经检测其酸价为0.31mgKOH/g,过氧化值为2.05mmol/kg,质量符合GB/T11765-2018油茶籽油要求。锌含量为1.02mg/100g,较抽样的市售油茶籽油含量高20%以上。
实施例2:取油茶籽100公斤,105℃处理10分钟,60℃烘至水份6%。脱壳并调壳仁比至约20%,进行压榨,毛油过滤后泵至脱胶罐,升油温到60℃,加入油量0.2%的50%柠檬酸水洗1次,升油温至80℃,加入油量10%的85℃食盐水洗2次后,90℃脱水干燥后冬化脱腊。经检测其酸价为0.17mgKOH/g,过氧化值为1.58mmol/kg,质量符合GB/T 11765-2018油茶籽油要求。锌含量为1.13mg/100g,较抽样的市售油茶籽油含量高20%以上。
本工艺制备的油茶籽油具有油损耗小、品质优、锌含量高等特点,本发明也适用大豆、菜籽、茶叶籽等其它植物的富锌油制备。
可以理解的是,对本领域技术人员来说,对本发明的技术方案及发明构思加以等同替换或改变都应属于本发明所附的权利要求的保护范围。

1.一种富锌油茶籽油高效制备工艺,其特征在于:具体步骤如下:
(1)油茶籽的选择:选完全成熟、籽粒饱满且油脂酸值不超过2mgKOH/g,过氧化值不超过10mmol/kg的油茶籽;
(2)温度梯度干燥和壳仁比调控进行油茶籽压榨处理:油茶籽先90℃-105℃处理10-30分钟,然后60℃-75℃烘至水分5%-10%,脱壳油茶籽并调壳仁比至20%-50%,压榨毛油过滤;
(3)柠檬酸-饱和食盐水耦合低损脱胶:压榨后将过滤毛油泵至脱胶罐,加入油量0.05%-0.2%重量比的45%-55%重量比的柠檬酸于40℃-70℃处理45-90分钟,升油温至60℃-80℃,加入油量5%-15%重量比的70℃-90℃食盐水水洗2次,脱水干燥至油表面无汽泡。
2.根据权利要求1所述的富锌油茶籽油高效制备工艺,其特征在于:在步骤(3)后,进行冬化脱腊精滤。
