Description

分放充气组合物的方法
本发明涉及材料的操作,特别是涉及充气组合物的操作,以连续方式提供可再现体积的这种组合物。
可再现体积的充气材料的分放有一定困难,因为可以预期这种材料在操作期间会改变形状或体积。问题的原因是由于以气泡形式的充气,当小小的甚至局部的压力变化,也能使体积发生变化。对于冰冻甜食,这一问题尤其突出,因为这些组合物是充气的,而且除奶制固体外还包括含有脂肪或脂代替物和水。这些甜食有冰淇凌、冰奶、冰冻酸乳酪和冰冻蛋奶沙司,要求在低温即0℃以下小心操作以保持它们的结构。充气巧克力是另一材料的例子,在加压下它将改变体积。
压力的附加变化和继之的体积变化常常伴随着粘度的变化。因此,当受到压力时充气材料将表现出不同的流速。
U.S.4566612(Krenter)描述了使用一种柔性舌瓣阀来分放冰淇凌。Oaokes(GB 2006597)公开一种蜂窝状产品如充气巧克力的生产,和经由活塞上的小孔来分放产品。EPA 0539646(Ferrero)则给出一种分放蛋糖酥皮(meringue)的设备。U.S.4787534(Ferrero)也描述了一种计量分放流体或丰流体物质的机器。
在文献里对冰冻甜食已很好表征,一般状况中参见Arbuckle andJ SOC Dairy Technology 1990,43(1)PP17-20。
按照本发明可实现充气材料最好是食品材料的分放,方法是在压力下压缩材料至预定体积,其中减小气泡至能有效消除测量误差的体积。因此,本发明包括分放可再现量的充气易变形组合物的方法,此方法包括如下步骤:
i)在加压下将组合物导入第一体积,
ii)使第一体积膨胀至第二体积,在此体积充气的压力与环境压力相同,和
iii)分放第二体积的充气组合物。
本发明方法特别适用于充气食品材料。
使第一体积膨胀至第二体积的优选方式是在一园筒内有一可移动的活塞。本方法特别适用的冰冻甜食通常有一流溢(Over-run)范围50-200%。
当从一个单岐管供料的几个剂量单元时本发明特别有价值。设备的变化并不影响从每一单元的剂量体积,因为在膨胀体积的充气材料的体积是与供料岐管分开的。
下面将参考附图说明本发明方法的一个实施例,但并不限制本发明。
图1-3给出置换充气材料的装置操作的顺序。
图1中活塞2可在园筒1内滑动,材料则从入口岐管5经由入口管4供入园筒体积内。材料是从管道4通过换向阀6进入园筒1,和当阀6旋转换向时材料再通过阀6离开园筒1。此阀可以是任何常规设计和也可以包括两个分开操作的阀。管道4和岐管5含有加压的充气材料。材料从圆筒经阀6和出口管3排出。
图1中,阀6打开让材料进入圆筒内占据已测量的第一体积7。当阀6关闭(见图2),在已知压力下第一体积保持在封闭的圆筒内。对于冷冻甜品,此压力为5-6巴,从而使充气气体被压缩至其原体积的1/5或1/6。
参见图2,然后活塞2在圆筒内移动,使压缩的充气材料膨胀至充满第二体积8。在此体积内,充气气体为环境压力,它通常即大气压力。因此,第二体积被预定体积的充气材料占据。此体积8可从测量冰冻甜品在已知压力下的体积7而得到。
旋转阀6使与管道3连通,参见图3,活塞2在圆筒内移动,在第二体积内的充气材料就形成部分9。这部分9当活塞到它的行程端点时就从装置中分出和阀6关闭。
冰冻甜食的溢流为100%。部分9可分放至适宜的模子或可食用的容器中,如一个巧克力杯壳。

Claims (3)

1.分放可再现量的充气的易变形组合物的方法,此方法包括如下步骤:
i)加压下将组合物导入第一体积,
ii)使第一体积膨胀至第二体积,在此体积下充气的压力与环境压力相同,和
iii)分放第二体积的充气组合物。
2.根据权利要求1的方法,其中通过在一圆筒内的活塞的移动使第一体积膨胀。
3.根据权利要求1或2的方法,其中充气组合物是具有溢流范围50-200%的冰冻甜食。
