Abstract
本发明公开了一种含益生菌组合物的固体饮料,其特征在于,由以下重量份的原料制成:异麦芽酮糖800~850份、大豆蛋白粉480~520份、木糖醇200~220份、益生菌组合物180~200份、甜橙果汁粉80~100份、水苏糖80~100份、甜橙香精35~45份、罗汉果粉15~25份和西兰花种子水提物1~5份;制备方法包括原料处理、称量和混料等三个步骤。本发明益生菌组合物固体饮料含有多种有益菌种和低糖成分,通过大豆蛋白粉、益生菌组合物和益生元的相互协调作用,在快速缓解胃痛、胃烧心的急症同时,还可以抑制幽门螺旋杆菌的作用,保护胃黏膜,达到调整胃肠功能,维护胃肠健康的功能。

技术领域
本发明涉及营养保健技术领域,更具体的说是涉及一种含益生菌组合物的固体饮料及其制备方法。
背景技术
益生菌是通过定殖在人体内,改变宿主某一部位菌群组成的一类对宿主有益的活性微生物,通过调节宿主黏膜与系统免疫功能或通过调节肠道内菌群平衡,促进营养吸收保持肠道健康的作用,从而产生有利于宿主健康作用的单微生物或组成明确的混合微生物。
益生菌主要包括乳杆菌类与双歧杆菌类,其中,乳杆菌能够促进消化酶的分泌和肠道蠕动,清除肠道垃圾,同时对一些长期口服抗生素而引起胃肠功能失调的病人有很好的肠道功能和肠道菌群快速调节的作用;双歧杆菌在人体肠内发酵后可产生乳酸和醋酸,能提高钙、磷、铁的利用率,促进铁和维生素D的吸收。
在国外已开发出了数以百计的益生菌保健产品,其中包括:含益生菌的酸牛奶、酸乳酪、酸豆奶以及含多种益生菌的口服液、片剂、胶囊、粉末剂、抑菌喷剂等等。但是国内对益生菌的认知度还不是很强,这使得益生菌的产品线应用还不是很广泛,因为存活率就是一大技术难题。而且,目前市面上出现的益生菌固体饮料在提高免疫力和改善肠道消化方面仍然有待于改善和提高。
因此,寻求一种兼具营养和保健双重功效的益生菌固体饮料是本领域技术人员亟需解决的问题。
发明内容
有鉴于此,本发明提供了一种含益生菌组合物的固体饮料及其制备方法,含有多种有益菌种和低糖成分,通过大豆蛋白粉、益生菌组合物和益生元的相互协调作用,在快速缓解胃痛、胃烧心的急症同时,还可以抑制幽门螺旋杆菌的作用,保护胃黏膜,达到调整胃肠功能,维护胃肠健康的功能。
为了实现上述目的,本发明采用如下技术方案:
一种含益生菌组合物的固体饮料,由以下重量份的原料制成:异麦芽酮糖800~850份、大豆蛋白粉480~520份、木糖醇200~220份、益生菌组合物180~200份、甜橙果汁粉80~100份、水苏糖80~100份、甜橙香精35~45份、罗汉果粉15~25份和西兰花种子水提物1~5份。
优选地,异麦芽酮糖820~830份、大豆蛋白粉500~520份、木糖醇200~210份、益生菌组合物190~200份、甜橙果汁粉90~100份、水苏糖90~100份、甜橙香精38~42份、罗汉果粉18~22份和西兰花种子水提物3~5份。
更优选地,异麦芽酮糖828份、大豆蛋白粉500份、木糖醇207份、益生菌组合物200份、甜橙果汁粉100份、水苏糖100份、甜橙香精40份、罗汉果粉20份和西兰花种子水提物5份。
本发明固体饮料的有益效果在于:
通过大豆蛋白粉、益生菌组合物、益生元相互协调作用,在快速缓解胃痛、胃烧心的急症同时,还可以抑制幽门螺旋杆菌的作用,保护胃黏膜,达到调整胃肠功能,维护胃肠健康的功能。实验表明,本发明固体饮料不仅使益生元和益生菌产生了协同作用,大豆蛋白粉、益生元和益生菌之间也产生了协同作用,从而使得该组合物的在缓解胃部不适方面具有更加快速和显著的作用。其中:
异麦芽酮糖,甜度约为蔗糖的一半,口感较为温和细致,不仅本身不会引起蛀牙,更有抑制由蔗糖引起的蛀牙效果;在固体饮料中具有自由流动性,结块风险低。其中,
大豆蛋白粉,采用大豆与特殊乳酸菌株Lactobacillus delbrueckii R-187发酵而成,内含特殊生物活性复合物、乳酸菌体、大豆蛋白、多肽、氨基酸及微生物代谢产物,能有效缓解胃烧心、胃部不适。
木糖醇,可作为甜味剂、湿润剂,在体内促进肝糖元合成,供细胞以营养和能量,且不会引起血糖值升高,消除糖尿病人服用后的三多症状,对肝病患者有改善肝功能和抗脂肪肝的作用;能够抑制细菌在牙齿表面的吸附,从而减少了牙齿的酸蚀,防止龋齿和减少牙斑的产生,巩固牙齿;木糖醇为人体提供能量,合成糖元,减少脂肪和肝组织中的蛋白质的消耗,使肝脏受到保护和修复,减少人体内有害酮体的产生,不会因食用而为发胖忧虑。
甜橙果汁粉,即甜橙的浓缩物,含有的大量维生素C和胡萝卜素,能增加机体抵抗力,增加毛细血管的弹性,降低血中胆固醇;所含纤维素和果胶物质,可促进肠道蠕动,有利于清肠通便,排除体内有害物质。
水苏糖,对人体胃肠道内的双歧杆菌、乳酸杆菌等有益菌群有着极明显的增殖作用,能迅速改善人体消化道内环境,调节微生态菌群平衡;能促进形成有益菌在消化道内的优势菌地位,抑制产气产酸梭状芽孢杆菌等腐败菌的生产;另外,能够产生大量的生理活性物质,调节肠道pH值、灭杀致病菌,阻遏腐败产物生成,抑制内源致癌物的产生和吸收,并且分解衍生出多重免疫功能因子。
甜橙香精,淡黄色透明水溶性、油溶性的液体,具有甜香的甜橙香气。
罗汉果粉,含有大量的果糖、十多种人体必需氨基酸、脂肪酸、黄酮类化合物、维生素C、微量元素等,具有无毒、低热量、高甜度、热稳定性好等优点,营养价值高,还有清热解暑、化痰止咳、凉血舒骨、清肺润肠和生津止渴等功效;具有防治冠心病、血管硬化、肥胖症的作用。
西兰花种子水提物,其中的萝卜硫素能够减少幽门螺旋杆菌定殖,促进胃黏膜修复;具有抑制胃癌和胰腺癌的生长和侵袭、抗肿瘤、快速持续促进机体对空气污染物的排出、抗氧化损伤、免疫调节、抗炎症等药理作用。
进一步,上述益生菌组合物包括瑞士乳杆菌、植物乳杆菌、长双歧杆菌、动物双歧杆菌、鼠李糖乳杆菌中的任一种或几种的混合。
更进一步,上述益生菌组合物还包括低聚果糖。
采用上述进一步的有益效果在于,将多种益生菌搭配使用,并添加低聚果糖等天然配料,相辅相成,相得益彰,能够显著提高机体免疫力并改善肠道消化。其中:
瑞士乳杆菌、植物乳杆菌和长双歧杆菌等益生菌能够调节免疫反应,促进Th1免疫反应的能力,从而提高幽门螺杆菌的根除率,提高溃疡的治愈率,修补胃黏膜缺陷。
低聚果糖,是一种同时具有超强双歧因子和水溶性膳食纤维的双生理学特性的全天然配料,分子量较小,对双歧杆菌的保健功效具有增殖作用;低聚果糖的添加,不仅提高了产品的营养和保健价值,同时还能有效延长产品的保质期;此外,低聚果糖热量低,不会引起肥胖也不会使血糖上升,是理想的新型保健甜味剂;低聚果糖还可促进双歧杆菌和乳酸杆菌等在结肠中的生长,既能满足人体基本的生理功能和新陈代谢的需要,又能促进人体健康,其功效相辅相成,相得益彰。
一种含益生菌组合物的固体饮料的制备方法,具体包括以下步骤:
(1)原料处理:将木糖醇过30~80目筛,备用;将异麦芽酮糖粉碎、过30~80目筛,备用;将异麦芽酮糖、大豆蛋白粉、甜橙果汁粉和水苏糖70~80℃干燥至水分3%以下、冷却至18~25℃后过30~80目筛,备用;
(2)称量:按上述含益生菌组合物的固体饮料的重量份数称取各原料;
(3)混料:先将甜橙香精、罗汉果粉和西兰花种子水提物进行第一次混合,搅拌速度为3~5r/min,时间为20~30min,再加入异麦芽酮糖、大豆蛋白粉、木糖醇、益生菌组合物、甜橙果汁粉和水苏糖进行第二次混合,搅拌速度为3~5r/min,时间为20~30min,即得含益生菌组合物的固体饮料。
在上述制备工艺过程中,步骤(1)至步骤(3)均在30万级的洁净区内操作进行。
本发明制备方法的有益效果在于:工艺流程较为简单,所用仪器设备较为常规,适合大批量工业化生产。

西兰花种子水提物,符合《关于乳木果油等10种新食品原料的公告(卫生部公告2017年第7号)》的规定,性状:白色至黄褐色粉末,萝卜硫苷13-20g/100g。
实施例1
含益生菌组合物的固体饮料,由以下重量的原料制成:异麦芽酮糖800g、大豆蛋白粉480g、木糖醇200g、益生菌组合物180g(其中,瑞士乳杆菌100g,植物乳杆菌80g)、甜橙果汁粉80g、水苏糖80g、甜橙香精35g、罗汉果粉15g和西兰花种子水提物1g。
制备方法:
(1)原料处理:将木糖醇过30目筛,备用;将异麦芽酮糖粉碎、过30目筛,备用;将异麦芽酮糖、大豆蛋白粉、甜橙果汁粉和水苏糖70℃干燥至水分3%以下、冷却至18℃后过30目筛,备用;

制备方法:
(1)原料处理:将木糖醇过40目筛,备用;将异麦芽酮糖粉碎、过40目筛,备用;将异麦芽酮糖、大豆蛋白粉、甜橙果汁粉和水苏糖70℃干燥至水分3%以下、冷却至20℃后过40目筛,备用;
(2)称量:按上述含益生菌组合物的固体饮料的重量称取各原料;
(3)混料:先将甜橙香精、罗汉果粉和西兰花种子水提物进行第一次混合,搅拌速度为3r/min,时间为20min,再加入异麦芽酮糖、大豆蛋白粉、木糖醇、瑞士乳杆菌、植物乳杆菌、长双歧杆菌、甜橙果汁粉和水苏糖进行第二次混合,搅拌速度为3r/min,时间为20min,即得含益生菌组合物的固体饮料。

制备方法:
(1)原料处理:将木糖醇过50目筛,备用;将异麦芽酮糖粉碎、过50目筛,备用;将异麦芽酮糖、大豆蛋白粉、甜橙果汁粉和水苏糖75℃干燥至水分3%以下、冷却至20℃后过50目筛,备用;
(2)称量:按上述含益生菌组合物的固体饮料的重量称取各原料;

(1)原料处理:将木糖醇过60目筛,备用;将异麦芽酮糖粉碎、过60目筛,备用;将异麦芽酮糖、大豆蛋白粉、甜橙果汁粉和水苏糖80℃干燥至水分3%以下、冷却至25℃后过60目筛,备用;
(2)称量:按上述含益生菌组合物的固体饮料的重量称取各原料;
(3)混料:先将甜橙香精、罗汉果粉和西兰花种子水提物进行第一次混合,搅拌速度为5r/min,时间为20min,再加入异麦芽酮糖、大豆蛋白粉、木糖醇、瑞士乳杆菌、植物乳杆菌、长双歧杆菌、低聚果糖、甜橙果汁粉和水苏糖进行第二次混合,搅拌速度为5r/min,时间为20min,即得含益生菌组合物的固体饮料。
实施例5
含益生菌组合物的固体饮料,由以下重量的原料制成:异麦芽酮糖850g、大豆蛋白粉520g、木糖醇220g、益生菌组合物200g(其中,瑞士乳杆菌100g,植物乳杆菌80g,长双歧杆菌10g,鼠李糖乳杆菌10g)、甜橙果汁粉100g、水苏糖100g、甜橙香精45g、罗汉果粉25g和西兰花种子水提物5g。
制备方法:
(1)原料处理:将木糖醇过80目筛,备用;将异麦芽酮糖粉碎、过80目筛,备用;将异麦芽酮糖、大豆蛋白粉、甜橙果汁粉和水苏糖80℃干燥至水分3%以下、冷却至25℃后过80目筛,备用;
(2)称量:按上述含益生菌组合物的固体饮料的重量称取各原料;
(3)混料:先将甜橙香精、罗汉果粉和西兰花种子水提物进行第一次混合,搅拌速度为5r/min,时间为30min,再加入异麦芽酮糖、大豆蛋白粉、木糖醇、瑞士乳杆菌、植物乳杆菌、长双歧杆菌、鼠李糖乳杆菌、甜橙果汁粉和水苏糖进行第二次混合,搅拌速度为5r/min,时间为30min,即得含益生菌组合物的固体饮料。
性能测试
1、感官指标检验
各取少量实施例1~5制备的含益生菌组合物的固体饮料,根据GB/T29602-2013(固体饮料)标准分别进行感官指标检验,操作步骤为:按照标签标示冲泡50mL样品,倒入无色透明的容器中,置于明亮处,观察其状态、色泽,嗅其气味,品尝其滋味,结果如表1所示。

由表1可知,本发明含益生菌组合物的固体饮料的状态、色泽、气味和滋味均符合相应指标。
2、理化指标检验
各取少量实施例1~5制备的含益生菌组合物的固体饮料,分别进行理化指标检验,结果如表2所示。
其中,按照GB5009.3检测方法检测水分含量,按照GB5009.12检测方法检测铅含量,按照GB2762检测方法检测其他污染物限量,按照GB2761检测方法检测真菌毒素限量。

由表2可知,本发明含益生菌组合物的固体饮料水分含量符合相应标准,且均未检出铅、其他污染物和真菌毒素。
3、微生物指标检验
各取少量实施例1~5制备的含益生菌组合物的固体饮料,分别进行微生物指标检验,结果如表3所示。
其中,大肠菌群的检验方法为:GB4789.3MPN计数法,霉菌的检验方法为:GB4789.15。

由表3可知,本发明含益生菌组合物的固体饮料的大肠菌群和霉菌含量均符合相应指标。
Claims (10)
1.一种含益生菌组合物的固体饮料,其特征在于,由以下重量份的原料制成:异麦芽酮糖800~850份、大豆蛋白粉480~520份、木糖醇200~220份、益生菌组合物180~200份、甜橙果汁粉80~100份、水苏糖80~100份、甜橙香精35~45份、罗汉果粉15~25份和西兰花种子水提物1~5份。
2.根据如权利要求1所述的一种含益生菌组合物的固体饮料,其特征在于,由以下重量份的原料制成:异麦芽酮糖820~830份、大豆蛋白粉500~520份、木糖醇200~210份、益生菌组合物190~200份、甜橙果汁粉90~100份、水苏糖90~100份、甜橙香精38~42份、罗汉果粉18~22份和西兰花种子水提物3~5份。
3.根据如权利要求2所述的一种含益生菌组合物的固体饮料,其特征在于,由以下重量份的原料制成:异麦芽酮糖828份、大豆蛋白粉500份、木糖醇207份、益生菌组合物200份、甜橙果汁粉100份、水苏糖100份、甜橙香精40份、罗汉果粉20份和西兰花种子水提物5份。
4.根据权利要求1~3任一项所述的一种含益生菌组合物的固体饮料,其特征在于,所述益生菌组合物包括瑞士乳杆菌、植物乳杆菌、长双歧杆菌、动物双歧杆菌、鼠李糖乳杆菌中的任一种或几种的混合。
5.根据权利要求4所述的一种含益生菌组合物的固体饮料,其特征在于,所述益生菌组合物还包括低聚果糖。
6.一种含益生菌组合物的固体饮料的制备方法,其特征在于,具体包括以下步骤:
(1)原料处理:将木糖醇过筛,备用;将异麦芽酮糖粉碎、过筛,备用;将异麦芽酮糖、大豆蛋白粉、甜橙果汁粉和水苏糖干燥、冷却后过筛,备用;
(2)称量:按权利要求1~5任一项所述含益生菌组合物的固体饮料的重量份数称取各原料;
(3)混料:先将甜橙香精、罗汉果粉和西兰花种子水提物进行第一次混合,再加入异麦芽酮糖、大豆蛋白粉、木糖醇、益生菌组合物、甜橙果汁粉和水苏糖进行第二次混合,即得所述含益生菌组合物的固体饮料。
7.根据权利要求6所述的一种含益生菌组合物的固体饮料的制备方法,其特征在于,步骤(1)中,所述木糖醇过筛的筛网目数为30~80目;
所述异麦芽酮糖过筛的筛网目数为30~80目。
8.根据权利要求6所述的一种含益生菌组合物的固体饮料的制备方法,其特征在于,步骤(1)中,所述干燥的温度为70~80℃,干燥至水分3%以下;
所述冷却至18~25℃;
所述冷却后过筛的筛网目数为30~80目。
9.根据权利要求6所述的一种含益生菌组合物的固体饮料的制备方法,其特征在于,步骤(3)中,所述第一次混合的搅拌速度为3~5r/min,时间为20~30min。
10.根据权利要求6所述的一种含益生菌组合物的固体饮料的制备方法,其特征在于,步骤(3)中,所述第二次混合的搅拌速度为3~5r/min,时间为20~30min。
