Abstract
本发明为一种饮料,包含有南瓜5~15%,黑木耳0.1~3%,红枣0.1~5%,山药0.1~5%,苡米0.1~5%,红米0.1~5%,山楂0.1~5%,柑桔汁0.5~10%,蛋白糖0.05~0.18%,柠檬酸0.05~0.2%,天然食用香精0.05~0.2%,将各组分混合,经取汁、发酵、均质、灌封、高温杀菌等工艺制备而成,具有高营养、低热量,适应糖尿病、高血压、肥胖、贫血、龋齿、营养不良、消化不良等患者饮用,是消暑解渴的理想饮料。
Description
本发明涉及一种饮料,特别是一种以瓜果谷蔬为主要原料的饮料。
市场上的饮料多种多样,但大多是营养成份单一,口味单一,且含有蔗糖、葡萄糖等高能量甜味剂,不适宜糖尿病、高血压等患者饮用,还可引发肥胖、龋齿等。
本发明的目的在于提供一种以瓜果谷蔬滋养食疗食品为主要原料配制的饮料,该饮料含有人体所需的多种营养成份和维生素,低热量,弥补了现有饮料存在的营养成份单一、高热量糖份过高等不足,具有保健、养身、防病等功效。
本发明所提供的饮料包含有南瓜、黑木耳、红枣、山药、苡米、红米、山楂、柑桔汁、蛋白糖、柠檬酸、天然食用香精、羧甲基纤维素钠、苯甲酸钠,各组分所占重量比为:
南瓜 5~15%
黑木耳 0.1~3%
红枣 0.1~5%
山药 0.1~5%
苡米 0.1~5%
红米 0.1~5%
山楂 0.1~5%
柑桔汁 0.5~10%
蛋白糖 0.05~0.18%
柠檬酸 0.05~0.2%
天然食用香精 0.05~0.2%
羧甲基纤维素钠 0.05~0.2%
苯甲酸钠 0.02~0.1%
水 适量
这种饮料的制备方法包括以下步骤:
(1)将南瓜、红枣、山楂、桔子破碎,将破碎果肉加热至60-70℃、15-30分钟软化处理,然后榨汁、过滤,其提取液待配料;
(2)将黑木耳、山药、苡米、红米粉碎,将粉碎后的细粉经过煮制、发酵、过滤,其提取液待配料;
(3)将上述两种提取液混合,装入贮料罐,加入羧甲基纤维素钠和苯甲酸钠,加上适量的水,加热至60-70℃,待羧甲基纤维素钠和苯甲酸钠溶解后加柠檬酸和蛋白糖溶液,加热到80-90℃,添加天然食用香精混均;
(4)将混合料液进行均质和脱气处理;
(5)将配制好的饮料汁灌装入饮料罐,严密封盖,再经高温杀菌,最后包装成品。
根据营养学和药理研究表明,一些瓜果谷蔬具有很高的营养价值和药理作用。本发明制备的饮料选用南瓜等天然食品为主要原料,依据营养互补原理,同时添加热量极低的甜味料,使本饮料与同类饮料比较,不但具有果蔬清香、口感滑腻的独特风味,而且不含蔗糖、葡萄糖等高能量甜味料,具有很高的食疗保健作用。
本饮料各种成份的作用如下所述。
南瓜:含丰富的糖类、淀粉、蛋白质、氨基酸、多种维生素(A、B、C)、微量元素钙、磷、钴、铬等物质,瓜肉有润肺、益气的功效,瓜瓤可清热利湿、解毒消渴。据日本研究,南瓜可以有效地防治糖尿病、高血压、贫血以及肝脏和肾脏的一些病变。
黑木耳:含蛋白质、氨基酸、不饱和脂肪酸、糖类(主要为D-甘露糖)、灰分(主要含磷、硫、铁、钙、钾、镁、钠等),有滋养益胃、和血养营、补气血、润肺、止血、抗高血压、血管硬化、抗癌等作用
红枣:含蛋白质、糖类、有机酸和钙、磷、铁、胡萝卜素及维生素B、C、P等物质,红枣能和百药助十二经脉,为安中益气的良药,有养脾和胃、益气生津、补虚润燥功效,为缓和滋养剂,是“养胃健脾、益血壮神”的常用药,近代药理学实验证明,红枣具有保护肝脏、增强肌力、治疗过敏性紫癫、再生障碍性贫血、血友病、血小板减少性紫癫、缺铁性贫血以及降低血清胆固醇含量、增加血清总蛋白及白蛋白的作用。
山药:含淀粉酶蛋白质、糖类、矿物质、维生素、胆碱、粘液质,精氨酸等,有补中益气、补脾胃、长肌肉、止泄泻、治消渴和健肾固精、益肺等功用,适用于身体虚弱、食欲不振、消化不良、慢性腹泄、虚劳咳嗽、遗精盗汗、妇女白带、糖尿病等症。山药的特点是补而不滞、不热不燥,能补脾气而益胃阴,为培补脾胃、性质平和的药物
苡米:含糖类、不饱和脂肪油、氨基酸以及苡米脂、三萜化合物等物质,有利尿渗湿、除痹、清热利暑、健脾止泻之功效,为优良营养品。
红米:含淀粉、蛋白质、脂肪、维生素(B1、A、E)及钙、磷、铁等物质,有健脾养胃之功效。
山楂:含山楂酸、柠檬酸、鞣质、果糖、皂苷、维生素C、蛋白质、脂肪油、黄酮苷、胡萝卜素、尼克酸及钙、铁等物质,果肉可消食化积、散瘀血、健脾胃、下气活血、消痞散积、降血脂、降血压、强心和抗心律不齐等功效,临床用于治疗高血压、冠心病、高脂血症等,山楂内的黄酮类化合物壮荆素,是一种抗癌作用较强的药物
柑桔:含有丰富的糖类、多种维生素、枸椽酸、钙、磷、铁、橙皮苷等,有润肺、止咳、止泻、利小便 开胃、行气、止消渴(糖尿病)、健胃、化痰、顺气活血等作用
蛋白糖:又名天门冬酰苯丙氨酸甲酯,也叫天冬甜精、甜味素,是由天门冬氨酸和苯丙氨酸组成的二肽类甜味剂,为白色结晶,甜度约为蔗糖的200倍,具有白糖的纯甜味,而没有人造甜味剂的异味,热值仅为白糖的0.5%,在体内能分解为氨基酸,是一种热量极低的甜味料,且有增味、矫味的独特功能。由于蛋白糖在人体内代谢不需胰岛素参与,不会引起血糖升高,不会产生乳酸引发龋齿,因此是糖尿病、肥胖症、龋齿患者理想的代糖品。
综上所述,本发明的优点是:本饮料选用了多种营养丰富且有药理作用的瓜果谷蔬为主要原料,采用食物互补原理和科学的工艺方法配制而成,属高营养、低热量的天然绿色保健饮料,经理化检测证实,本饮料富含蛋白质、氨基酸、维生素、微量元素等有价值的成份,无毒、无杂味,口感好,极适应糖尿病、高血压、肥胖、贫血、龋齿、营养不良、消化不良等患者饮用,且原料来源广泛,生产工艺简单独特,是一种消暑解渴的保健型饮料。
下面提供本发明的几个实施例。
实施例1:
本实施例的配方为:鲜南瓜6%、黑木耳0.2%、红枣4%、山药3%、苡米0.2%、红米0.1%、山楂0.4%、柑桔汁6%、蛋白糖0.06%、柠檬酸0.15%、天然食用香精0.1%、羧甲基纤维素钠0.08%、苯甲酸钠0.06%。
本产品的配制方法包括如下步骤:
(1)将按比例选配的南瓜、红枣、山楂、桔子采用旋风式水果破碎机破碎,破碎粒度为3MM左右,用夹层锅将破碎果肉加热至60-70℃、15-30分钟进行预备处理,使果肉软化,果胶质水解,降低汁液应粘度,并有利于色素和风味物质的渗出和抑制酶的活性;采用螺杆水果榨汁机对破碎后的果肉连续榨汁;采用离心机对浑浊果蔬汁过滤,其提取液待配料;
(2)将黑木耳、山药片、苡米、红米采用多功能粉碎机粉碎,粉碎细度为80-100目,粒度大难以转化水解,并且收率少,粒度过小水解转快,但粗纤维及杂质容易渗出混入精制汁中,影响汁液的质量,因此以80-100目细度最优;将粉碎后的细粉经过煮制糊化,在煮制到30℃时加入α-淀粉酶(按原料粉的1%),边搅拌慢慢液化2小时直至煮沸;降温到65℃时加入β-淀粉酶(糖化酶,按原料的1%),搅拌混均后,保持在55℃-65℃最适宜的温度之间糖化水解淀粉6小时(温度过高时酶失活性,温度过低时容易感染杂菌,发酵变质),糖化时不需搅动糖化液,待液面澄清时,残渣下沉,淀粉转化成糖,并产生甜味后再加温90℃灭酶,使酶失去活性,终止发酵及杀灭杂菌,并且使果胶物质失去粘性,使残渣沉淀;采用离心机在0.5MM滤网过滤分离汁液,在过滤分离中浆液保持80-90℃,在此温度之间粘度小、收率大、质量好;其提取液待配料;
(3)将上述两种提取液混合,装入贮料罐,分配到夹层锅内,加入羧甲基纤维素钠和苯甲酸钠,加上适量的水,加热到60-70℃,待羧甲基纤维素钠和苯甲酸钠溶解后加柠檬酸和蛋白糖溶液,加热到80-90℃,添加天然食用香精混均;
(4)将混合料液进行均质和脱气处理;均质是生产混浊性高营养饮料的特殊操作,不经均质处理的浑浊高营养饮料,由于含有较大的悬浮粒子,在重力作用下会逐渐沉淀而降低混浊度,可用高压均质机或胶体磨对混浊饮料通过高压泵加压至100-190公斤/厘米2后,从均质阀的极细间隙降低喷出。由于冲击作用和急速降压而膨胀,使混浊饮料汁中的小颗粒,进一步微细化至胶体颗粒大小,并使被破碎的微粒均匀地分散在饮料汁中,胶体磨可使饮料汁中小颗粒磨细至胶体颗粒大小,并使之均匀地分散在混浊饮料汁中,混浊饮料汁经均质处理后可提高混浊度,混浊的稳定性、口感性也显著增加,可以获得不易出现沉淀的成品
脱气是脱除饮料中的氧气,可以减少或避免色素、维生素C、香气和其他物质的氧化,防止或减少罐装和杀菌时产生泡沫,采用80℃热灌装可省去用真空罐抽气工艺及设备,减少挥发性芳香物质的损失。
(5)将均质后80℃的饮料汁采用灌装机灌装入饮料罐,灌装前,饮料罐要清洗并蒸汽杀菌,灌满后的饮料及时通过封罐机严密封盖,再通过高温杀菌锅杀灭或钝化饮料汁中微生物(细菌、霉菌、酵母等)。可采用老式隧道式杀菌的生产操作,也可采用超高温瞬时杀菌器杀菌,杀菌条件可采用110-120℃以上,保持3-10秒;最后包装成品
实施例2:
本实施例的配方为:鲜南瓜10%、黑木耳0.5%、红枣0.5%、山药1%、苡米0.4%、红米0.3%、山楂0.8%、柑桔汁3%、蛋白糖0.09%(M-100)、柠檬酸0.1%、天然食用香精0.12%、羧甲基纤维素钠0.1%、苯甲酸钠0.04%。
本产品的配制方法与实施例1相同。
实施例3:
本实施例的配方为:鲜南瓜12%、黑木耳0.5%、红枣3%、山药2%、苡米4%、红米2%、山楂0.5%、柑桔汁2.5%、蛋白糖0.12%、柠檬酸0.12%、天然食用香精0.1%、羧甲基纤维素钠0.15%、苯甲酸钠0.02%。
本产品的配制方法与实施例1相同
本饮料的主要成份是采用中国互农红军在井冈山时的主要食品“红米饭、南瓜汤”的红米、南瓜,与其它营养食品配制而成,因此定名为“红军宝”饮料,使本饮料更具有深远的历史意义和教育意义。

1、一种饮料,其特征在于包含南瓜、黑木耳、红枣、山药、苡米、红米、山楂、柑桔汁、蛋白糖、柠檬酸、天然食用香精、羧甲基纤维素钠,苯甲酸钠,各组分所占重量比为:
南瓜 5~15%
黑木耳 0.1~3%
红枣 0.1~ 5%
山药 0.1~5%
苡米 0.1~5%
红米 0.1~ 5%
山楂 0.1~5%
柑桔汁 0.5~10%
蛋白糖 0.05~018%
柠檬酸 0.05~0.2%
天然食用香精 0.05~0.2%
羧甲基纤维素钠 0.05~0.2%
苯甲酸钠 0.02~0.1%
水 适量
2、根据权利要求1所述的一种饮料的配制方法,其特征在于包括以下步骤:
(1)将南瓜、红枣、山楂、桔子破碎,将破碎果肉加热至60-70℃,15-30分钟软化处理,然后榨汁,过滤,其提取液待配料;
(2)将黑木耳、山药、苡米、红米粉碎,将粉碎后的细粉经过煮制、发酵、过滤,其提取液待配料;
(3)将上述两种提取液混合,装入贮料罐,加入羧甲基纤维素钠和苯甲酸钠,加上适量的水,加热至60-70℃,待羧甲基纤维素钠和苯甲酸钠溶解后加柠檬酸和蛋白糖溶液,加热到80-90℃,添加天然食用香精混均;
(4)将混合料液进行均质和脱气处理;
(5)将配制好的饮料汁灌装入饮料罐,严密封盖,再经高温杀菌,最后包装成品。
