本发明涉及食品加工领域,具体涉及一种适合脂肪肝患者饮用的酸奶及加工工艺。
背景技术
脂肪肝是指由于各种原因引起的肝细胞内脂肪堆积过多的病变。轻度脂肪肝有的仅有疲乏感,而多数脂肪肝患者较胖,故更难发现轻微的自觉症状。中重度脂肪肝有类似慢性肝炎的表现,可有食欲不振、疲倦乏力、恶心、呕吐、体重减轻、肝区或右上腹隐痛等。
脂肪肝应避免饮酒,并且注意合理膳食,通过饮食治疗脂肪肝,应该在保证人体蛋白质及各种营养素的基本需要基础上,造成一种热能消耗的负平衡状态,使体重逐步下降至接近标准体重。比如调整饮食结构,提倡高蛋白质、高维生素、低糖、低脂肪饮食,不吃或少吃动物性脂肪、甜食(包括含糖饮料),多吃青菜、水果和富含纤维素的食物,以及高蛋白质的瘦肉、河鱼、豆制品等,不吃零食,睡前不加餐等方式,通过良好的生活方式和合理的营养配比,脂肪肝是可以恢复正常的。
发明内容
本发明就是针对上述现状,而提供一种适合脂肪肝患者饮用的酸奶及加工工艺。
一种适合脂肪肝患者饮用的酸奶及加工工艺,其特征在于:所述酸奶采用了如下配方及加工工艺。
(1)挑选优质原料、称取:脱脂酸奶500-800份、玉米150-200份、黑芝麻100-160份、山药100-160份、菠菜80-120份、芹菜80-120份、芦荟80-120份、山楂50-80份、银耳50-80份。
(2)将玉米、黑芝麻、山药、菠菜、芹菜、芦荟、山楂、银耳洗净,将山药去皮后切成段,将山楂去核去蒂,将银耳用温水泡发,将菠菜、芹菜切成段;将芦荟鲜叶片清水漂洗,用次氯酸钠溶液浸泡30分钟,冲洗干净,去除鲜叶的周边部位及外皮,将凝胶取出。
(3)将上述加工好的玉米、黑芝麻、山药、菠菜、芹菜、芦荟、山楂、银耳分别送入打浆机破碎打浆,并静置沉淀,取上层澄清的果蔬汁浓缩得到浓缩液,加热至煮沸,冷却后备用。
(4)将上述调配好的果蔬汁进行均质,并泵入真空脱气机中,真空度设置为40-50kPa,温度设置为30-40℃。
(5)将脱气后的果蔬汁与脱脂酸奶搅拌5-10分钟后,混合发酵。
(6)将上述原料在18-20Mpa、65-70℃的条件下进行均质,在95±5℃杀菌5-10分钟的条件下进行杀菌。
(7)将上述果蔬酸奶饮料调香后,在无菌环境下进行灌装、封口,经检验合格后,放置于0-4℃条件下进行冷藏储存。
本发明所述的适合脂肪肝患者饮用的酸奶及加工工艺,其特征在于:所述酸奶中添加有甜味剂,所述甜味剂为木糖醇、赤藓糖醇或麦芽糖醇。
本发明所述的酸奶中主要原料的营养成分及功能如下。
上述脱脂酸奶是指除去奶上层的脂肪(奶油),所含的脂肪在1%以下酸奶的一种,含有硫胺素、蛋白质、核黄素、烟酸、碳水化合物、维生素C、维生素E、维生素A、膳食纤维、胡萝卜素、视黄醇、锌、铜、钾、磷、锰、钠、硒、铁、镁、钙等营养成分,酸奶的营养优于鲜牛奶,可以补充丰富的钙质及多种维生素,是将牛奶中的乳糖和蛋白质分解,使人体更易消化和吸收。

上述菠菜有助于缓解脂肪肝症状,菠菜属健脑蔬菜,由于菠菜中含有丰富的维生素A、C、B1和B2,是脑细胞代谢的“最佳供给者”之一。此外,它还含有大量叶绿素,也具有健脑益智作用。

(2)将玉米、黑芝麻、山药、菠菜、芹菜、芦荟、山楂、银耳洗净,将山药去皮后切成段,将山楂去核去蒂,将银耳用温水泡发,将菠菜、芹菜切成段;将芦荟鲜叶片清水漂洗,用次氯酸钠溶液浸泡30分钟,冲洗干净,去除鲜叶的周边部位及外皮,将凝胶取出。
(3)将上述加工好的玉米、黑芝麻、山药、菠菜、芹菜、芦荟、山楂、银耳分别送入打浆机破碎打浆,并静置沉淀,取上层澄清的果蔬汁浓缩得到浓缩液,加热至煮沸,冷却后备用。
(4)将上述调配好的果蔬汁进行均质,并泵入真空脱气机中,真空度设置为45kPa,温度设置为35℃。
(5)将脱气后的果蔬汁与脱脂酸奶搅拌5-10分钟后,混合发酵。
(6)将上述原料在19Mpa、68℃的条件下进行均质,在95℃杀菌8分钟的条件下进行杀菌。
(7)将上述果蔬酸奶饮料调香后,在无菌环境下进行灌装、封口,经检验合格后,放置于0-4℃条件下进行冷藏储存。
本实施例所述的适合脂肪肝患者饮用的酸奶及加工工艺,其特征在于:所述酸奶中添加有甜味剂,所述甜味剂为木糖醇、赤藓糖醇或麦芽糖醇。
本实施例所述的适合脂肪肝患者饮用的酸奶,营养丰富,含有人体所必需的氨基酸,富含蛋白质、卵磷脂、核黄素、烟酸、维生素A、维生素C、维生素E、胡萝卜素、视黄醇、硫胺素以及锌、铜、钾、磷、锰、钠、硒、铁、镁、钙等营养成,具有降低血清胆固醇,预防脂肪肝,增强身体免疫力,缓解身体疾病,补肺益气、扩张血管、降低血压、降低胆固醇,保护肝脏功能,有助于消化吸收。
本实施例所述的酸奶中主要原料的营养成分及功能如下。
上述脱脂酸奶是指除去奶上层的脂肪(奶油),所含的脂肪在1%以下酸奶的一种,含有硫胺素、蛋白质、核黄素、烟酸、碳水化合物、维生素C、维生素E、维生素A、膳食纤维、胡萝卜素、视黄醇、锌、铜、钾、磷、锰、钠、硒、铁、镁、钙等营养成分,酸奶的营养优于鲜牛奶,可以补充丰富的钙质及多种维生素,是将牛奶中的乳糖和蛋白质分解,使人体更易消化和吸收。
上述玉米含丰富的钙、硒、卵磷脂、维生素E等,具有降低血清胆固醇的作用。玉米粒因其膳食纤维丰富,吃下血糖不会迅速升高,玉米粒中含有胡萝卜素、黄体素、玉米黄质,尤其是玉米黄质含量较丰,因此玉米是延缓眼睛老化的极佳补充食物。老年黄斑性病变是眼睛老化所造成的疾病,严重时会造成视力缺损。从许多流行病学的研究发现,黄体素、玉米黄质,可以预防老年黄斑性病变的产生。
上述黑芝麻有非常好的补肾功效,含有大量的不饱和脂肪酸,黑芝麻能加速人体新陈代谢,养精血,润发养颜,其中的卵磷脂特别适合脑力工作中食用。黑芝麻味甘、性平,富含油酸、亚油酸、棕榈酸、维生素E,还含有叶酸、尼克酸、卵磷脂、蛋白质和钙,其油脂含量达60%。黑芝麻能够润肠通便、补肺益气、通血脉、润肌肤、滋补肝肾、养发美容;并对头发早白、头晕耳鸣、贫血萎黄、津液不足有治疗作用。丰富的维生素E能消除自由基而延缓人体细胞衰老的过程,亚油酸、棕榈酸等不饱和甘油脂,能防病抗衰老。
上述山药,味甘、性平,归脾、肺、肾经,山药既可以补气健脾,又有降血糖的功效,能养阴益肺、补肾固精,宜于脾气虚弱、食少便溏、慢性泄泻。山药具有营养滋补、增强机体免疫力、调度内排泄、补气通脉、镇咳祛痰、平喘等功能,能改善冠状动脉及微循环血流,可治疗慢性气管炎、冠心病、心绞痛等。怀山药对虚性咳嗽及肺痨发烧患者都有很好的治疗结果。春季天气较枯燥,易伤肺津,招致阴虚,出现口干、咽干、唇焦、干咳等病症,此时进补山药最为适合,因山药是安然平静之品,为滋阴养肺之上品。
上述菠菜有助于缓解脂肪肝症状,菠菜属健脑蔬菜,由于菠菜中含有丰富的维生素A、C、B1和B2,是脑细胞代谢的“最佳供给者”之一。此外,它还含有大量叶绿素,也具有健脑益智作用。
上述芹菜对脂肪肝患者康复起着举足轻重的作用,食用芹菜,可去脂消炎,对脂肪肝发展成肝硬化者可缩短凝血酶原时间,并具止血功效。芹菜汁营养十分丰富,100克芹菜中含蛋白质2.2克,钙8.5毫克,磷61毫克,铁8.5毫克,其中蛋白质含量比一般瓜果蔬菜高1倍,铁含量为蕃茄的20倍左右,芹菜中还含丰富的胡萝卜素和多种维生素等,对人体健康都十分有益。并且芹菜叶茎中含有挥发性的甘露醇,别具芳香,能增强食欲,芹菜还具有平肝降压作用,另对人和动物有镇静作用,能消除烦躁,具有保健作用。
上述芦荟不仅是食物,其药用大于食用价值,芦荟能够调整身体内分泌,增强身体免疫力,清除体内异常细胞,杀死癌细胞,治疗缓解身体的各种疾病,对脂肪肝有明显改善作用,芦荟还拥有神奇的排毒、消炎、镇定、修复作用。
上述山楂经常食用,有助于消除脂肪肝,山楂有利于润燥护阴,为蔷薇科落叶灌木或小乔木植物野山楂的果实,性味酸甘微温,含山楂酸,酒石酸,柠檬酸等类物质,有扩张血管,降低血压,降低胆固醇,增加胃液消化酶等作用。
上述银耳又叫白木耳,银耳多糖不仅能改善人的肝、肾功能,银耳含有丰富的蛋白质、脂肪和多种氨基酸、矿物质及肝糖。银耳中含有17种氨基酸,人体所必需的氨基酸中的3/4银耳都能提供。银耳含有多种矿物质,如钙、磷、铁、钾、钠、镁、硫等,其中钙、铁含量很高,在每百克银耳中,含钙643毫克,铁30.4毫克。此外,银耳中还含有海藻糖、甘露糖醇等肝糖,营养价值很高,是一种高级滋养补品;银耳能提高肝脏解毒能力,保护肝脏功能。
实施例2:本实施例所述的适合脂肪肝患者饮用的酸奶及加工工艺,其特征在于:所述原料及重量比为:脱脂酸奶600份、玉米160份、黑芝麻120份、山药140份、菠菜90份、芹菜90份、芦荟95份、山楂50份、银耳70份,其加工工艺同实施例1。
实施例3:本实施例所述的适合脂肪肝患者饮用的酸奶及加工工艺,其特征在于:所述原料及重量比为:脱脂酸奶750份、玉米180份、黑芝麻120份、山药120份、菠菜110份、芹菜90份、芦荟110份、山楂60份、银耳60份,其加工工艺同实施例1。
虽然以上描述了本发明适合脂肪肝患者饮用的酸奶的具体实施方式,但是熟悉本技术领域的技术人员应当理解,我们所描述的具体的实施例只是说明性的,而不是用于对本发明的范围的限定,熟悉本领域的技术人员在依照本发明的精神所作的等效的修饰以及变化,都应当涵盖在本发明的权利要求所保护的范围内。
Claims (4)
1.一种适合脂肪肝患者饮用的酸奶及加工工艺,其特征在于:所述酸奶采用了如下配方及加工工艺:
(1)挑选优质原料、称取:脱脂酸奶500-800份、玉米150-200份、黑芝麻100-160份、山药100-160份、菠菜80-120份、芹菜80-120份、芦荟80-120份、山楂50-80份、银耳50-80份;
(2)将玉米、黑芝麻、山药、菠菜、芹菜、芦荟、山楂、银耳洗净,将山药去皮后切成段,将山楂去核去蒂,将银耳用温水泡发,将菠菜、芹菜切成段;将芦荟鲜叶片清水漂洗,用次氯酸钠溶液浸泡30分钟,冲洗干净,去除鲜叶的周边部位及外皮,将凝胶取出;
(3)将上述加工好的玉米、黑芝麻、山药、菠菜、芹菜、芦荟、山楂、银耳分别送入打浆机破碎打浆,并静置沉淀,取上层澄清的果蔬汁浓缩得到浓缩液,加热至煮沸,冷却后备用;
(4)将上述调配好的果蔬汁进行均质,并泵入真空脱气机中,真空度设置为40-50kPa,温度设置为30-40℃;
(5)将脱气后的果蔬汁与脱脂酸奶搅拌5-10分钟后,混合发酵;
(6)将上述原料在18-20Mpa、65-70℃的条件下进行均质,在95±5℃杀菌5-10分钟的条件下进行杀菌;
(7)将上述果蔬酸奶饮料调香后,在无菌环境下进行灌装、封口,经检验合格后,放置于0-4℃条件下进行冷藏储存。
2.根据权利要求1所述的适合脂肪肝患者饮用的酸奶及加工工艺,其特征在于:所述酸奶中添加有甜味剂,所述甜味剂为木糖醇、赤藓糖醇或麦芽糖醇。
3.根据权利要求1所述的适合脂肪肝患者饮用的酸奶及加工工艺,其特征在于:所述原料及重量比为:脱脂酸奶600-700份、玉米160-190份、黑芝麻110-150份、山药110-150份、菠菜90-110份、芹菜90-110份、芦荟90-110份、山楂60-70份、银耳60-70份。
4.根据权利要求1所述的适合脂肪肝患者饮用的酸奶及加工工艺,其特征在于:所述原料及重量比为:脱脂酸奶650份、玉米175份、黑芝麻130份、山药130份、菠菜100份、芹菜100份、芦荟100份、山楂65份、银耳65份。
