本发明涉及一种佐餐调料,具体涉及一种甜辣椒酱。
背景技术
目前市场上销售的辣椒酱,是用辣椒及豆酱为原料或者是用辣椒及肉类为原料制作的。这些辣椒酱,在人们就餐时作为调味食料食用,主要是以辣味为主,味道单一,满足不了人们食用辣椒酱时对不同口味的要求,同时营养还不够丰富。
发明内容
针对以上现有技术中存在的不足,本发明提供了一种辣味劲道,适宜于东南口味的甜辣椒酱。
本发明是通过以下技术方案实现的:
一种甜辣椒酱,所述甜辣椒酱的原料及其重量份配比为:
将上述原料均匀混合后,蒸煮60-100分钟,捣烂所有原料,并搅拌均匀,即制得甜辣椒酱。
所述干辣椒面和新鲜辣椒均选用皖南地产红尖椒。
本发明的有益效果为:选用皖南地产红尖椒,价格低廉,辣味足,肉质厚,水分含量高,搭配来源于同一产地的蔗糖,在辣味的基础上,增加了甜味,使甜辣椒酱具备了甜辣口味,满足人们对于口味的需求。

甜辣椒酱的原料及其重量份配比为:干辣椒面15;新鲜辣椒5;糯米粉10;菜籽油6;麻油2;蔗糖5;蒜泥3;生姜2;食盐2;纯净水10。将以上原料均匀混合后,蒸煮60-100分钟,捣烂所有原料,并搅拌均匀,即制得甜辣椒酱。其中干辣椒面和新鲜辣椒均选用皖南地产红尖椒,价格低廉,辣味足,肉质厚,水分含量高,搭配来源于同一产地的蔗糖,在辣味的基础上,增加了甜味,使甜辣椒酱具备了甜辣口味,满足人们对于口味的需求。
