Abstract
本发明揭示了一种大豆芽体果蔬豆乳粉的制法,包含原料的制备,豆乳粉的制备两部分。以大豆芽体为基料,配入果蔬粉、功能性甜味料、增味剂、增稠剂等加工成的豆乳粉的氨基酸含量和蛋白质的溶解度提高,胃蛋白酶消化率明显改善,果蔬粉含有丰富的人体必需成分(维生素和矿物质元素)和生理活性成分,其营养功效①具有明显的调节血脂降低血浆胆固醇作用;②调节胰岛素水平,改善血糖生成反应的功能;③能改善大肠功能,促进肠道蠕动,减少有害物质与肠的接触时间,可以有效地防治结肠癌;④增强人体的免疫功能。实施本发明的大豆芽体果蔬豆乳粉的制法,能够满足广大患者对治疗糖尿病进行多种选择的要求。
Description
技术领域
本发明涉及一种食用粉的制法,尤其涉及一种大豆芽体果蔬豆乳粉的制法。
背景技术
中国疾病控制中心最新报告显示:目前我国高血压和血脂异常人群近1.6亿。我国糖尿病者已超过9200万,还有1.5亿人属糖尿病前期——血糖偏高的人群,虽还未发展到糖尿病的程度,但患糖尿病的危险性极大。且发病率呈向年轻化发展态姿。糖尿病者与高血糖人群往往同时伴生高血压、高血脂、高血粘症状。糖尿病已成为继癌症、心血管病之后的人类第三杀手。
豆类的种子的发芽是一个生物化反应过程。经适度的发芽,其化学成分有所改变,营养增效。大多数原有的生物活性成分增量,还会产生一些新的生物活性成分,生理功效提升,并能形成独特的风味及口感。英国食品化专家通过研究发现,大豆发芽后氨基酸含量和蛋白质的溶解度提高,对水油的吸收性、乳化性、起泡性增强,胃蛋白酶消化率明显善,“豆腥味和涩味”显著降低。另据文献报道,必需氨基酸由原来的34.5%提高到42.2%,非必需氨基酸由41.1%提高到48.7%,氨基酸总量由75.9%提高到90.9%。发芽后的大豆低分子量蛋白质和高分子量蛋白质比值一有明显提高。且VB1、VB2、Vc和可溶性成倍增长,蛋白比(PER)、净蛋白效率(NPR)、和蛋白质系數(PR)也得到提高。干果粉与芝麻粉富含功能性蛋白质和脂质。经低温粉碎,蛋白质不会变性,是养身健体、增智健脑、抗癌防癌、抗衰防老的功能性食品。
近年我国引进、选育出多种特种保健食品。特种保健食品系指富含食品功能因子或及药理因子,进入人体后,对生理节律的疏导、调节、平衡明显有益、有效、有活性。现多为炒菜食用,或泡茶饮用,可以说这是低效应用,由于菜用、茶用,受地域、季节及其流通环节的限制,难以成为常食食品。
发明内容
鉴于上述现有技术存在的缺陷与不足,本发明的目的是:提出一种工艺简单、又对糖尿病具有一定疗效的大豆芽体果蔬豆乳粉的制法。
本发明的目的,将通过以下技术方案得以实现:一种大豆芽体果蔬豆乳粉的制法如下:
基料:大豆芽体:10kg大豆,按常规方法发芽至芽长约3㎜的芽体;配比为大豆芽体:杂粮(豆)芽体﹦100:20(均以种子催芽前的质量计);乳化剂:卵磷脂,颗粒体或粉体。用量为0.15㎏;脂肪酸蔗糖酯,0.05%;
②配料:以制品的质量百分数为100计;
果蔬粉:用量10~15。干果粉可选用花生仁粉、杏仁粉、核桃仁、核桃仁粉、银杏仁粉、粟子仁粉、松子仁粉、莲芯粉、榛子仁粉、葵花子仁粉、沙棘籽粉、芡实粉等。水果粉可选用桂圆粉,红枣粉、苹果粉、橙子粉、桔子粉、山楂粉、桃子粉、柠檬粉、猕猴桃粉、椰子粉、枸杞粉、南爪粉、香蕉粉、葡萄粉、草莓粉、树莓(红莓、黑莓、蓝莓)粉、果桑葚粉、木瓜粉、西番莲粉、火龙果粉等。蔬菜粉如番茄粉、胡萝卜粉、西兰花粉、萝卜粉、牛蒡粉、山药粉、萝卜叶粉(或胡萝卜叶粉)、菠菜粉(或及芹菜带叶粉)、(红)苋菜粉(或紫叶甘兰)粉、百合粉、香芋粉(或及慈菇粉)、仙人掌粉(或及芦芸粉)、魔芋粉、豆瓣菜粉、香葱粉、荠菜粉、洋葱粉(或及蒜苔粉、麦绿素(大麦或燕麦叶汁)粉、螺旋藻粉、木耳菜、香菇粉、麻菇粉(或及其它菇、菌、蕈、芝粉)、海藻粉、灵菊7﹟(降糖草,又称印度神参)粉;此外还有芝麻粉,水果粉和蔬菜粉向专业生产厂商外购;
粉末香精:用量为1.0%;与所配入的果蔬粉相应香型;
①大豆芽体:10kg大豆,按常规方法发芽至芽长约3mm的芽体;
②干果粉与芝麻粉:取原科用花生·芝麻粉碎机粉碎成粒度为200~300目∕50mm的粉体,随用随制备;
③混合、热烫、加热:大豆芽体用清水冲洗干净,沥干水后,置于带搅拌装置的夹层蒸煮锅中,投入到80℃的热水中热烫,并保持15~18min,同时搅拌。加盖,缓慢冷却至40±5℃,加热过程,促进原料组织软化,熟化和酶解;
②低温干燥:真空低温干燥(控温65±5℃),干燥终点为8.0%;
④粉碎:干燥物料冷却至室温后,先用辊压机粗破碎,后用气流粉碎机粉碎成300~400目/50mm的微粉体;
⑤混配:将微粉体与果蔬粉、辅料按配比置于DLH—P型多角变距锥形混合机,混合5~8min;

具体实施方式
一种大豆芽体杏仁红枣乳粉的制法,其步骤如下:
基料:大豆芽体:10kg大豆,按常规方法发芽至芽长约3mm的芽体;配比为大豆芽体:杂粮(豆)芽体﹦100:20(均以种子催芽前的质量计);乳化剂:卵磷脂,颗粒体或粉体。用量为0.15㎏;脂肪酸蔗糖酯,0.05%;
②配料:以制品的质量百分数为100计;

②干果粉与芝麻粉:取原科用杏仁·芝麻粉碎机粉碎成粒度为200目∕50mm的粉体,随用随制备;
③混合、热烫、加热:大豆芽体用清水冲洗干净,沥干水后,置于带搅拌装置的夹层蒸煮锅中,投入到80℃的热水中热烫,并保持15min,同时搅拌。加盖,缓慢冷却至40℃,加热过程,促进原料组织软化,熟化和酶解;
②低温干燥:真空低温干燥(控温65℃),干燥终点为8.0%;
④粉碎:干燥物料冷却至室温后,先用辊压机粗破碎,后用气流粉碎机粉碎成300~400目/50mm的微粉体;

综上所述,本发明以谷物为原料,利用现代先进工艺制取的大豆芽体果蔬豆乳粉兼有大豆和果蔬的双重营养作用和生理功效。果蔬粉含有丰富的为大豆芽体所缺少的、缺乏的功效成分,二者强强互补。大豆芽体果蔬乳粉是一种中、低GI值的食品,又是一种难能可贵的偏碱性食品。长期食用大豆芽体果蔬乳粉能补充摄入不同种类的蔬菜或果品,对人体生理的疏导、调节和平衝十分有益、有效。并有利减少血糖的生成和波动,维持人体的体液的微碱性,明显的降低血脂,降低血糖的作用,提高抗氧化活性,清除体內多余的自由基,抑制脂质过氧化反应,延缓衰老的功效,是为各年龄段人群,特别是糖尿病人首选功能性食品。
Claims (1)
1.一种大豆芽体果蔬豆乳粉的制法,其工艺步骤如下 :
基料:大豆芽体:10kg大豆,按常规方法发芽至芽长约3㎜的芽体;配比为大豆芽体:杂粮(豆)芽体﹦100:20(均以种子催芽前的质量计);乳化剂:卵磷脂,颗粒体或粉体;
用量为0.15㎏;脂肪酸蔗糖酯,0.05%;
②配料:以制品的质量百分数为100计;
干果粉可选用花生仁粉、杏仁粉、核桃仁、核桃仁粉、银杏仁粉、粟子仁粉、松子仁粉、莲芯粉、榛子仁粉、葵花子仁粉、沙棘籽粉、芡实粉等;
水果粉可选用桂圆粉,红枣粉、苹果粉、橙子粉、桔子粉、山楂粉、桃子粉、柠檬粉、猕猴桃粉、椰子粉、枸杞粉、南爪粉、香蕉粉、葡萄粉、草莓粉、树莓(红莓、黑莓、蓝莓)粉、果桑葚粉、木瓜粉、西番莲粉、火龙果粉等;
蔬菜粉如番茄粉、胡萝卜粉、西兰花粉、萝卜粉、牛蒡粉、山药粉、萝卜叶粉(或胡萝卜叶粉)、菠菜粉(或及芹菜带叶粉)、(红)苋菜粉(或紫叶甘兰)粉、百合粉、香芋粉(或及慈菇粉)、仙人掌粉(或及芦芸粉)、魔芋粉、豆瓣菜粉、香葱粉、荠菜粉、洋葱粉(或及蒜苔粉、麦绿素(大麦或燕麦叶汁)粉、螺旋藻粉、木耳菜、香菇粉、麻菇粉(或及其它菇、菌、蕈、芝粉)、海藻粉、灵菊7﹟(降糖草,又称印度神参)粉;此外还有芝麻粉,水果粉和蔬菜粉向专业生产厂商外购;
功能性甜味料:用量为15%,可选异麦芽低聚糖或果糖、乳糖,粉体;
①大豆芽体:10kg大豆,按常规方法发芽至芽长约3mm的芽体;
②干果粉与芝麻粉:取原科用花生·芝麻粉碎机粉碎成粒度为200~300目∕50mm的粉体,随用随制备;
③混合、热烫、加热:大豆芽体用清水冲洗干净,沥干水后,置于带搅拌装置的夹层蒸煮锅中,投入到80℃的热水中热烫,并保持15~18min,同时搅拌;
加盖,缓慢冷却至40±5℃,加热过程,促进原料组织软化,熟化和酶解;
②低温干燥:真空低温干燥(控温65±5℃),干燥终点为8.0%;
④粉碎:干燥物料冷却至室温后,先用辊压机粗破碎,后用气流粉碎机粉碎成300~400目/50mm的微粉体;

集合包装:铝箔封口机,铝箔包裝袋,內放10~20个小包。
