Abstract
乳酸发酵果汁及饮料涉及一种供饮用的果汁及用这种果汁生产的饮料。以鲜苹果、菠萝、橙子、山楂等果品为原料,经粉碎过滤的果汁用乳酸菌和/或酵母菌发酵,沉降后得乳酸发酵果汁;再加入香料、糖等及用水稀释得到乳酸发酵果汁饮料。优点是维生素C、B1、B2含量高,并且含有氨基酸、赖氨酸及乳氨酸等营养物质有益人体健康,是现有果汁和饮料的换代产品。

本发明涉及一种供饮用的果汁及用这种果汁生产的饮料。
目前市场上销售的饮料主要有碳酸饮料和果汁饮料,缺点是维生素C、B1、B2含量很低,一般检测不到;更不含氨基酸、赖氨酸及乳氨酸等,因此不能对人体健康提供有益的帮助。
本发明的目的是研制一种维生素C、B1、B2含量较高,并且含有氨基酸、赖氨酸及乳氨酸等营养物质,有益于人体健康的果汁及其饮料。
本发明的目的是这样实现的:以鲜苹果、菠萝、橙子、山楂等果品为原料,经粉碎、过滤得到原浆果汁,灭菌后加入乳酸菌和/或酵母菌进行发酵,发酵完成之后再消毒灭菌,经自然沉降得到澄清的果浆即为乳酸发酵果汁。
以乳酸发酵果汁为基料,根据需要加入不同气味的天然香料和适量的糖等,加水稀释即得到乳酸发酵饮料。
本发明的优点是果汁经过乳酸菌和/或酵母菌发酵后,维生素C、B1、B2的含量明显提高,一般可提高1—2倍,而且氨基酸、赖氨酸及乳氨酸等营养物质的含量也很高,经常饮用对人体健康有益,是现有果汁和饮料的换代产品。
下面再对本发明作进一步描述:我们以鲜苹果、菠萝、橙子、山楂等果品为原料,清洗后粉碎,用200目滤布过滤后加热消毒灭菌,将此原浆果汁盛入发酵缸内,加入占原浆果汁重3%或4%或5%的乳酸菌和/或酵母菌拌均匀后进行发酵,在温度20—25℃条件下经过20—25天即可完成发酵,如提高发酵的温度,发酵天数可减少;再消毒灭菌,经自然沉降,其澄清果浆即乳酸发酵果汁。
2、乳酸发酵饮料,其特征在于以乳酸发酵果汁为基料,根据需要加入不同气味的天然香料和适量的糖等并加水稀释。

1.乳酸发酵果汁,以鲜苹果、菠萝、橙子、山楂等果品为原料,经粉碎、过滤得到原浆果汁,其特征在于灭菌后加入乳酸菌和/或酵母菌进行发酵,发酵完成之后再消毒灭菌,经自然沉降得到澄清的果浆即为乳酸发酵果汁。
