具有减肥与美容功效的多元植物蛋白工艺与配方,本发明涉及功能性营养强化食品领域,其配方含有小麦坯芽、大豆蛋白、魔芋精粉等成分。制作工艺是将选好的小麦胚芽清洗,放入3-5倍常温水浸泡2小时,使用胶体磨进行磨浆;大豆在120-130度灭酶,放入4-6倍常温水中浸泡6-8小时直接磨浆。然后将其浆液与小麦胚芽浆、魔芋精粉混合搅拌,浸泡1小时后加热,温度在90-95度维持30分钟,冷却至60-70度左右进行均质。本发明是一种新型的功能性营养强化食品,其目的是使肥胖患者在摄取全面营养的基础上达到减肥、健美的效果。

本发明涉及功能性营养强化食品领域,其特征为:(1)具有明确的保健功能;(2)含有一定的有效成分;(3)有效成分在食品中稳定存在;(4)经食用后摄取有效;(5)安全性高;(6)作为食品让消费者能接受。
背景技术
进入21世纪,肥胖症的发病率明显增加。随着饮食条件的逐步改善和运动量的不断减少,肥胖人数也在不断地增多。据报道,全国30个省市调查结果显示,肥胖者的发病率高达30%,7--18岁的学生肥胖率也超过了20%。
肥胖症的发生受多种因素的影响,但主要因素是膳食结构营养失衡,食品中携带残留有害物质,续而引发的生理病变,导致了中枢神经、脑垂体、内分泌紊乱。肥胖症也是续发高血脂、高血压、糖尿病、冠心病、脑血管病的诱因。自20世纪90年代以来,几乎所有的养殖业都在大量使用生长激素及有害健康的饲料,人们食用的这些鸡、鸭、鱼、猪、牛、羊肉,其动物体内与内脏都含有一定数量的残留激素和有害物质,经食用后对激素敏感的人群而言,无不身受其害。再者,人们一日三餐食用的大米,其中的米胚芽,面粉中的小麦胚芽,玉米胚芽几乎都在加工过程中把这些核心的营养素除去掉,长期食用这些食品,会使人体过早衰老,给人们的健康造成危害。
本发明是一种新型的功能性营养强化食品,其目的在于使肥胖患者在摄取全面营养的基础上达到减肥、健美的效果,远离亚健康。在多元植物蛋白配方中,小麦胚芽含有30%以上蛋白质,7%以上天然维生素E、维生素B族、矿物质和全部18种氨基酸。在医药中,维生素E有预防和治疗习惯性流产,提高男女性欲的功能。近年发现维生素E具有抗衰老、美容、调节血脂、降低胆固醇等疗效;大豆富含上千种的人体必须的营养素,蛋白质含量高达40%,不含胆固醇;魔芋精粉具有明显降低体重、调节血糖和血脂做用,是人们公认的健康食品。三者的完美复合,组成了多元植物蛋白基础配方,可根据不同人群的需求进行复配。

实施例1:饮料型
将选好的小麦胚芽清洗、放入3-5倍常温水浸泡2小时后使用胶体磨进行磨浆;大豆使用滚筒式炒锅进行烘烤,在120-130度灭酶,时间20-25分钟,将大豆炒至微黄后出锅,放入4-6倍常温水中浸泡6-8小时直接磨浆。将小麦胚芽浆、魔芋精粉混合,浸泡1小时后加热,温度在90-95度维持30分钟,冷却至60-70度左右进行均质,压力在42MPa,;也可直接使用粉碎好的小麦胚芽粉、大豆蛋白粉或分离蛋白、花生蛋白混合浸泡30分钟,再加入其余全部原料混合搅拌均匀,加热65-70度,均质。最后使用超高温灭菌机灭菌,直接进行无菌包装,经检验合格后入库。
实施例2:粉状
将小麦胚芽粉、大豆蛋白粉、花生蛋白、魔芋精粉进行膨化、粉碎,再和其他全部原料充分混合20分钟,臭氧灭菌、定量包装,检验合格后入库。

1.一种具有减肥与美容功效的多元植物蛋白,涉及功能性营养强化食品领域,其特点为:(1)具有明确的保健功能;(2)含有一定的有效成分;(3)有效成分在食品中稳定存在;(4)经食用后摄取有效;(5)安全性高;(6)作为食品让消费者能接受。其含有以下重量组份:
小麦胚芽 5--60%
花生蛋白 2-15%
大豆蛋白 3-20%
魔芋精粉 0.1--1.3%
木糖醇 3-15%
低聚果糖 2--12%
单甘脂 0.3-1%
2.根据权利要求1所述的多元植物蛋白,其特征在于每100ml或每100g中还含有以下重量的组份:
丙酮酸钙 0.05-3g
L肉碱 0.05-2g
透明质酸 0.05-1.5g
胶原蛋白 0.05-1.5g
维生素c 20-100mg
3.根据权利要求1或2所述的多元植物蛋白,其特征在于小麦胚芽,包括其粉状或由其产生的乳液;
4.根据权利要求1或2所述的多元植物蛋白,其特征包括黄豆、黑豆分离蛋白、蛋白粉或由其产生的乳液;
5.根据权利要求1或2的组分,其特征在于所制成品是粉状;
6.其根据权利要求1或2的组分特征在于,所制成品可以是植物蛋白液态乳;
7.其根据权利要求1或2的组分特征在于,应用于产生动物蛋白液态乳,或动、植物蛋白混合乳及乳饮。
