Abstract
本发明涉及一种基于香味阈值的重组枫槭香精,其特征在于,该重组枫槭香精由香味成分、糖类和溶剂组成,其中,重组枫槭香精以100%计,香味成分中各组分包括甲基环戊烯醇酮、2‒乙酰基呋喃、5‑羟甲基糠醛、糠醛、乙酰吡咯、2.6‑二甲基吡嗪、β‑大马酮、芳樟醇、葫芦巴内酯、α‑当归内酯、苯甲酸苄酯、香兰素、壬酸、柠檬酸、富马酸;糖类中各组分的的重量配比为:蔗糖0~1%,果糖2~2.6%,葡萄糖10~16%,麦芽糖20~32%;余量为溶剂。该重组枫槭香精应用于卷烟中,可明显增加卷烟香气量和烟气浓度、提升香气质、改善舒适性,且无焦苦气息、甜腻感等负面作用。

技术领域
本发明属于烟用香精技术领域,具体涉及一种基于香味阈值的重组枫槭香精、其重构方法及在卷烟中的应用。
背景技术
近年来,随着社会经济的快速发展和人民生活水平的迅速提高,广大消费者日益重视个人健康,对烟草消费品内在质量品质提出低焦油、低危害等要求。而烟草行业为响应消费者需求,不断深入推进“降焦减害”工程,但如何在降低卷烟焦油、减少卷烟危害的同时保持卷烟高香气、高舒适性等高品质属性已成为制约中式卷烟发展的关键,尤其是在当前焦油量已经有很大下降的情况下,在保持卷烟吸味的同时又要进一步大幅度降焦,其难度将会越来越大。
香精香料作为卷烟产品核心技术之一,在提高卷烟香气量、改善卷烟香气品质方面起着重要的支撑作用,因此一直以来也是中式卷烟关注的焦点。枫槭浸膏是枫槭木糖浆经有机溶剂浸提而得的一种传统烟草添加剂,一直以来主要用于混合型卷烟,其在增加卷烟香气量和烟气浓度、提升香气质、改善舒适性的同时,也带来强烈的焦苦气息、甜腻感等负面作用而影响了其在中式卷烟中的实际应用。更重要的是,枫槭浸膏受其来源植物生长环境温度、水分、土壤、光照等生长环境因素的影响,导致不同年份、不同产地甚至不同批次之间产品质量波动大、稳定性差,同时,不同生产工艺差异也导致了市场上枫槭浸膏产品五花八门、品质差距大,进而制约了其在中式卷烟中的应用。因此,开发无负面作用且产品质量稳定的枫槭浸膏产品已成为烟草企业和食品行业关注的课题,而在枫槭浸膏关键成分的系统分离分析基础上,通过香气模型重构技术获得新型枫槭香精无疑是可行的技术途径。
香气活力值(OAV)是构成复杂香气体系的某一单体香料的浓度与其香味阈值的比值,而根据不同烟用香料在体系中的OAV大小,可判断不同烟用香料对香气体系贡献程度的差异,OAV越大的香料,对香气体系贡献越大,反之亦然。这种贡献差异性对完善香气模型重构技术具有重要的现实意义。
因此,本发明在枫槭浸膏关键成分分离分析基础上,从OAV和经济成本这两个维度出发,开展枫槭浸膏模型重构,获得了一种性能优越的重组枫槭香精,不仅剔除了枫槭浸膏中产生焦苦气息、甜腻感等负面作用的不利成分,克服了传统枫槭浸膏产品质量稳定差的固有缺陷,而且有效提升了香料利用率和调香高效性。
发明内容
本发明目的在于克服现有技术缺陷,提供一种基于香味阈值的重组枫槭香精,该烟用香精可明显增加卷烟香气量和烟气浓度、提升香气质、改善舒适性,且无焦苦气息、甜腻感等负面作用。
本发明还提供了上述基于香味阈值的重组枫槭香精的重构方法及其在卷烟中的应用。
为实现上述目的,本发明采用如下技术方案:
一种基于香味阈值的重组枫槭香精的重构方法,其具体包括如下步骤:
1)枫槭香精成分划分:
依据枫槭浸膏成分分析结果,筛选出含量大于0.4mg/kg的26种成分,拟定为枫槭香精初始配方,并将26种成分划分为22种挥发性香味成分和4种非挥发性糖类成分,具体见下表1;

2)香味成分香韵归类:
参考《烟草香原料》(谢剑平,化学工业出版社,2009,ISBN:9787122055125)、《食用香料手册》(孙宝国、刘玉平,中国石化出版社,2004,ISBN:9787801645906),分别按照焦甜香、烘焙香、果香、花香、奶香和酸香6种香韵,将22种挥发性香味成分进行归类,归类结果见表2;

3)计算香味成分的香气活力值OAV:
依据香味成分的含量和其香味阈值,通过浓度含量与其香味阈值的比值计算得到不同香味成分在枫槭浸膏体系中的香气活力值,见表3;

4)重组枫槭香精成分
依据枫槭浸膏中香味成分的香气活力值OAV,同一种香韵中,去掉焦甜香香韵中OAV≤0.005的香味成分;去掉烘焙香韵中OAV≤0.01的香味成分;去掉花香香韵、果香香韵和酸香香韵中OAV≤10.0的香味成分;同时为丰富整个香精的烤甜香香韵、改善卷烟口感舒适性,额外增加了α-当归内酯、柠檬酸和富马酸;并在各香味成分含量基础上按比例上下浮动用量以对配方进行优化,最后用溶剂补足至100%。
最终确定的重组枫槭香精由香味成分、糖类和溶剂组成,其中,重组枫槭香精以100%计,香味成分和糖类的重量配比见下表,余量为溶剂;

本发明创新点在于开发一种无负面作用且产品质量稳定的枫槭浸膏,以可以有效提升香料利用率和调香高效性。本发明在枫槭浸膏关键成分分离分析基础上,从OAV和经济成本两个维度出发,开展枫槭浸膏模型重构获得一种性能优越的重组枫槭香精,该重组枫槭香精应用于卷烟中,可明显增加卷烟香气量和烟气浓度、提升香气质、改善舒适性,且无焦苦气息、甜腻感等负面作用。
具体实施方式
以下结合实施例对本发明的技术方案作进一步地详细介绍,但本发明的保护范围并不局限于此。
实施例1至3
实施例1至3所述重组枫槭香的各原料重量配比见表4。其中,实施例1中溶剂为丙二醇,实施例2和3中溶剂均为体积比1:1的丙二醇与水的混合液。

上述实施例1-3所述重组枫槭香精的制备办法,具体为:按比例取各原料组分,加入到溶剂中,搅拌至完全溶解,即得。
上述基于香味阈值的重组枫槭香精的重构方法,其具体包括如下步骤:
1)枫槭香精成分划分:
依据枫槭浸膏成分分析结果,筛选出含量大于0.4mg/kg的26种成分,拟定为枫槭香精初始配方,并将26种成分划分为22种挥发性香味成分和4种非挥发性糖类成分,具体见下表5;

2)香味成分香韵归类:
参考《烟草香原料》(谢剑平,化学工业出版社,2009,ISBN:9787122055125)、《食用香料手册》(孙宝国、刘玉平,中国石化出版社,2004,ISBN:9787801645906),分别按照焦甜香、烘焙香、果香、花香、奶香和酸香6种香韵,将22种挥发性香味成分进行归类,归类结果见表6;

3)计算香味成分的香气活力值OAV:
依据香味成分的含量和其香味阈值,计算得到不同香味成分在枫槭浸膏体系中的香气活力值,见表7;

4)重组枫槭香精成分
依据枫槭浸膏中香味成分的香气活力值OAV,同一种香韵中,去掉焦甜香香韵中OAV≤0.005的香味成分;去掉烘焙香韵中OAV≤0.01的香味成分;去掉花香香韵、果香香韵和酸香香韵中OAV≤10.0的香味成分;同时为丰富整个香精的烤甜香香韵、改善卷烟口感舒适性,额外增加了α-当归内酯、柠檬酸和富马酸;并在各香味成分含量基础上按比例上下浮动用量以对配方进行优化,最后用溶剂补足至100%。
卷烟应用试验
将实施例1-3调配制备的重组枫槭香精按0.06wt%的比例添加到烟丝中,同时以不添加重组枫槭香精的烟丝作为空白对照组,采用本领域常规方法制成卷烟产品,平衡水分(湿度60%±2%,温度25±1℃)24h,然后按照《YC/T 415-2011烟草在制品感官评价方法》进行感官评价,结果如表8和9所示。

表8和9的结果表明:和空白样相比,添加本发明重组枫槭香精的卷烟样品的香气质变好,香气量明显提高,烟气余味得到改善,并掩盖了杂气;同时重组枫槭香精也能确保产品质量稳定,这能大大扩展其在中式卷烟中的应用。
Claims (4)
1.一种基于香味阈值的重组枫槭香精,其特征在于,该重组枫槭香精由香味成分、糖类和溶剂组成,其中,重组枫槭香精以100%计,香味成分和糖类的重量配比见下表,余量为溶剂;
2.如权利要求1所述基于香味阈值的重组枫槭香精,其特征在于,所述溶剂为丙二醇、水、或丙二醇与水任意比例的混合物。
3.一种权利要求1所述基于香味阈值的重组枫槭香精的重构方法,其特征在于,包括如下步骤:
1)枫槭香精成分划分:
依据枫槭浸膏成分分析结果,筛选出含量大于0.4mg/kg的26种成分,拟定为枫槭香精初始配方,并将26种成分划分为22种挥发性香味成分和4种非挥发性糖类成分,具体见下表1;

2)香味成分香韵归类:
参考《烟草香原料》、《食用香料手册》,分别按照焦甜香、烘焙香、果香、花香、奶香和酸香6种香韵,将22种挥发性香味成分进行归类,归类结果见表2;

3)计算香味成分的香气活力值OAV:
