发明背景
在满足充分的骨形成和维持以及其它代谢功能,如神经传导、凝血、正常的细胞功能及肌肉收缩需求的人类饮食中,钙是一种重要元素。用在中性pH附近不溶或可溶的钙源强化食品是一种常规方法。目前用于强化食品的许多钙源在中性pH附近是不溶或基本不溶的,如碳酸钙、磷酸钙、柠檬酸钙和其它有机酸的钙盐,它们会形成沉淀,产生粉笔样口感。其它在中性pH附近是可溶或基本可溶的钙源,如氯化钙、氢氧化钙和一些有机酸的钙盐,它们会与乳蛋白质反应,形成不希望有的凝聚和沉降。
为稳定或减少钙源强化的乳品饮料中钙和乳蛋白质的沉降,加入角叉胶、果胶和/或其它胶质也是一种常规方法,但这些材料的不理想之处在于它们会使乳品粘度增高。蛋白质去稳定,如沉淀和凝聚主要是由于系统中游离的钙离子引起的。
若有一种钙源可以强化乳品饮料和其它乳制品,而不会引起凝聚和沉降,同时提高适口性,那将会非常理想。
发明概述
我们已开发了一种钙和水解多糖的复合物,可用于加入食品中对其进行钙强化,提供稳定的食品,没有凝聚和沉降,同时提高适口性。
根据本发明,提供了一种包括强化量的钙和水解多糖复合物的强化食品。
上述食品可以是乳品饮料等乳制品、糖果制品、冰淇淋或果汁等其它饮料。
上述复合物可以仅由钙和水解多糖组成,或还可包括一种酸。发明详述
水解多糖可来自带负电荷的多糖,如羧甲基纤维素、树胶或角叉胶,但最好是水解果胶。果胶一般分子量为10,000到150,000,聚合度(DP)为50到800,20%到80%被甲氧基化。尽管理论上果胶可被水解为DP为1,并被脱甲氧基化至0%,但实际上很难达到这种水平。优选水解果胶平均DP为1到25,更优选为1到10,水解果胶被脱甲氧基化超过50%较好,优选超过75%。
水解(当多糖为果胶时同时进行脱甲氧基化)可通过化学、物理或酶学方法或这些方法的组合完成。例如,酶促水解可通过我们的共同未决的美国专利申请(5387/39)中所述方法完成。化学水解可通过用酸处理完成,但优选用碱处理。物理水解可通过剪切完成。
钙和水解多糖复合物可通过混合钙化合物的水溶液或悬液与水解多糖的水溶液或悬液进行制备。钙化合物可以是氢氧化钙或来自一种或多种盐,如氯化物、碳酸盐、磷酸盐、硫酸盐或柠檬酸盐。当复合物由钙和水解多糖及一种酸组成时,所述酸优选为有机酸,如柠檬酸、苹果酸、延胡索酸、酒石酸、琥珀酸或乳酸。如果需要,可以使用一种或多种酸。
复合物的形式可以为水溶液或悬液,如果需要,可以对其进行干燥,如干燥成粉末,这可以通过本领域技术人员熟知的各种方法完成。
包括强化量的钙和水解多糖复合物的强化食品可以通过混合食品与复合物进行制备。复合物的形式可以是溶液或悬液,或也可以是干燥形式,如粉末。
以食品重量计,强化食品中复合物的量可以是0.05%到5%,优选0.1%-2.5%,更优选0.2%-1.0%。
所述食品随后可通过加入下述物质使其更加稳定,可加入胶质,如角叉胶、阿拉伯胶、瓜尔豆胶等,或加入乳化剂,如甘油单酯或甘油二酯、卵磷脂、硬脂酰乳酸钠或柠檬酸单甘油酯。
强化食品可以是冰冻、冷藏或耐藏的。
实施例
下述实施例进一步阐述本发明。
实施例1
制备两种溶液/悬液:
A.1.8g氯化钙溶于10ml水。
B.4.0g果胶水解物溶于40ml水中,果胶水解物由大约77%DP 1-3的果胶组成(其余主要为不溶性物质和水分)。
将溶液/悬液混合,然后加入至940ml脱脂乳中。然后将上述脱脂乳搅匀并进行巴氏消毒,在冰箱中于2-5℃保存。7周后,可见上述乳品保持稳定,没有沉降,并且风味良好。实施例2
制备3种溶液/悬液:
A.1.2g氯化钙溶于10ml水。
B.2.071g柠檬酸溶于10ml水中。
C.4.0g果胶水解物溶于40ml水中,果胶水解物由大约77%DP 1-3的果胶组成(其余主要为不溶性物质和水分)。
混合溶液/悬液A和B,然后加入溶液C。最终混合物加入至940ml脱脂乳中。然后将上述脱脂乳搅匀并进行巴氏消毒,在冰箱中于2-5℃保存。7周后,可见上述乳品保持稳定,没有沉降,并且风味良好。
实施例3
如实施例2所述制备强化乳品,但不进行巴氏消毒,而采用超高温处理(UHT)。在冰箱中于2-5℃贮存3周后,发现上述乳品保持稳定,没有沉降,并且风味良好。

Claims (8)

1.一种强化乳制品,其包括强化量的钙和水解果胶以及一种酸的复合物。
2.根据权利要求1的强化乳制品,其中水解果胶的DP为1到25。
3.根据权利要求1的强化乳制品,其中水解果胶被脱氧基化超过50%。
4.根据权利要求1的强化乳制品,其中以强化乳制品重量计,复合物的含量为0.05-5wt.%。
5.根据权利要求1的强化乳制品,其为冰冻、冷藏或耐藏的。
6.一种制备含有强化量的钙和水解果胶以及一种酸的复合物的强化乳制品的方法,它包括将乳制品与所述复合物混合。
7.根据权利要求6的方法,其中复合物的形式为溶液或悬液或干燥形式。
8.根据权利要求1的强化乳制品,其中还加入一种胶质或乳化剂。
