一种清洗干货红枣的方法,涉及家庭食用和红枣加工领域。传统方法多采用冷水方法,这样往往会达不到理想效果,本方法采用热水清洗红枣,水温在20℃-52℃,浸水时间在12-5分钟,枣在水中会因受热而膨胀,受热膨胀力会使枣皮面积变化,致使枣皮面部分杂质脱落,加之外力搅拌或刷洗同时运作,可以达到彻底清洗目的。还可明显改善食用口感,保持营养成分不流失。

一种清洗干货红枣的方法,涉及家庭食用和红枣加工领域。
背景技术
红枣,是鼠李科枣属植物,是原产中国的传统名优特产。民间一直视枣为“铁杆庄稼”“木本粮食”之一。枣作为药用也很早,《本草纲目》中对枣的药用已有记载。常食枣可治疗身体虚弱、神经衰弱、脾胃不和、消化不良、劳伤咳嗽、贫血消瘦,养肝防癌之功能,有“日食三颗枣,百岁不显老”之说。
贮藏红枣,多为鲜枣经风干或脱水制干,而红枣制干后,表皮皱褶内会积存许多灰尘杂质,加之红枣糖分高,有粘性,附着力强。不易清洗干净。学界对于红枣的研究多集中在药用保健和加工方法方面,对于红枣清洗环节却研究甚少。不论居家食用,还是加工领域,不论是人工清洗,还是机械清洗,多采用冷水方法,这样往往会达不到理想效果,本方法采用热水清洗红枣,可有效解决干货红枣清洗不干净的问题,还可明显改善食用口感,保持营养成分不流失。
发明内容
由于红枣在制干过程中,枣本身糖分和生理活性原因,制干前枣皮的碰伤口,除虫口伤外全部都能愈合,在水中浸泡时,红枣是漂浮在水面的,红枣蜡质枣皮,水是渗不进去的,只有枣柄窝是渗水的命门,这样就决定了红枣在清洗时,不能在水中浸泡过长的时间,否则,会使溶解于水的不洁净物有可能会反渗入红枣中,造成清洗环节污染。
本方法采用热水清洗红枣,水温在20℃-52℃,浸水时间在12-5分钟,枣在水中会因受热而膨胀,受热膨胀力会使枣皮面积变化,致使枣皮面部分杂质脱落,加之外力搅拌或刷洗同时运作,可以达到彻底清洗目的。由于红枣受热膨胀过程中,枣体内热气会通过枣柄窝外泄,清洗时间短,不会造成洗水內渗。本方法采用热水必须是饮用水加热到所需合适温度。本方法简单实用,既可以居家应用,也可以应用加工领域,不论是人工清洗,还是机械清洗都可采用。其经验验证方法可以通过掰开枣果,查看枣核与枣肉是否干净分离,食口感是否改善。一般来讲,水温和时间不当,枣核与枣肉粘黏,有浸水感,食口感差。
具体实施方式
一种清洗干货红枣的方法,采用39℃饮用热水,人工用毛刷在水中搅拌清洗干货红枣6分钟,捞出凉干。褶皱内无积存灰尘、杂质,查看枣核与枣肉是干净分离的,清洗后干货红枣皮薄、鲜亮,食口感明显改善,没有浸水感。

1.一种清洗干货红枣的方法,涉及家庭食用和红枣加工领域。特征在于热水清洗红枣,水温在20℃-52℃,浸水时间在12-5分钟,枣在水中会因受热而膨胀,受热膨胀力会使部分杂质脱落,加之外力搅拌或刷洗同时运作,可以达到彻底清洗目的。本方法简单实用,既可以居家应用,也可以应用加工领域,不论是人工清洗,还是机械清洗都可采用。
