本发明涉及食品技术领域,具体涉及一种多糖/塔拉胶复合型食用膜及其制备方法。
背景技术
食用膜是作为食品包装的一薄层可食用材料,或在食品组分和食品组分之间形成一层薄膜,根据材料的不同,可使用膜可大致分为蛋白质型、脂肪型、多糖型、以及复合型四类。可使用膜一般具有如下特征:1、具有优良的阻隔性能,具有良好的阻骑行、保香性、阻水性以及阻油性,可隔绝食品与环境以及食品内部之间的质的传递,提高食品质量、延长货架寿命;2、易被生物降解,无任何污染;3、提高食品机械强度使其易于加工锤炼了,阻止风味物质挥发;3、可方便食品进行单体包装;4、可作为营养强化剂、抗氧化剂、抗微生物制剂的载体。
随着食用膜的进一步研究,单一组形成的食用膜和性能单一的食用膜在使用上具有一定的局限性,性能单一的食用膜已不能满足市场的需求,可使用膜在性能的提升和在多功能上的研发越来越受到重视。
发明内容
本发明的目的在于,针对现有技术,提供一种多糖/塔拉胶复合型食用膜及其制备方法。
为实现上述目的,本发明采取以下技术方案:一种多糖/塔拉胶复合型食用膜其由质量份以下原料组成:普鲁兰多糖20~40份、硒多糖1~10份、壳聚糖1~5份、塔拉胶100~200份、多元醇类增塑剂1~10份;所述的多元醇类增塑剂为甘油、山梨醇、聚乙二醇的一中或几种组成。
其制备方法包括以下步骤:
(1)将壳聚糖、硒多糖、壳聚糖加入到质量浓度为1%已酸溶液中溶解得到多糖溶液;
(2)将塔拉胶制成质量浓度我1~5%的溶液,置于80℃条件下搅拌5小时;
(3)将塔拉胶溶液与步骤(1)制得的多糖溶液混合,加入多元醇增塑剂。常温下充分搅拌均匀,超声脱气泡;
(4)取步骤(3)所得的混合物均匀平铺于干燥的模具中,在45℃条件下鼓风干燥,冷却后揭膜,将膜存储在相对湿度为53%的干燥器中,在25℃条件下平衡72h,即得本发明的一种多糖/塔拉胶复合型食用膜。
进一步的,所述的步骤(4)中,干燥器中采用饱和六水硝酸镁溶液为干燥剂。
本发明中,多元醇为甘油、山梨醇、聚乙二醇的一种或几种,甘油、山梨醇、聚乙二醇影响塔拉胶的膜热性能、物化以及阻隔性能,添加甘油、山梨醇、聚乙二醇的一种或及几种可增加膜的抗拉伸强度,提高延展率。
本发明中,壳聚糖是天然多糖高分子,是甲壳素的N‐脱乙酰基的产物。可溶于有机酸,具有天然的无毒性、生物相容性和生物降解性,并且有广谱的抑菌活性。但壳聚糖不具有的阻水阻氧性能。
本发明中,普鲁兰多糖的阻气性、可塑性、粘性均较强,透气性低,氧、氮、二氧化碳和香气等气体几乎不能通过,降低贮存过程中食品的营养损失,并且具有抗油性,可以防止扩散和因配料与添加剂所含油脂氧化引起的气味与口味变质。
本发明中,硒多糖为一种有机硒化合物,天然硒多糖可从灵芝、香菇、螺旋藻、薯叶、大蒜、黑木耳等植物中提取。硒多糖的生物活性高,便于人体吸收和利用,具有较好的生理和药理功能,硒多糖参与食用膜的合成,同时硒多糖具有良好的保健作具有抗金属中毒、抗氧化、抗病毒、抗肿瘤、提高机体免疫力等功能,还可作为食品保健添加剂使用。
其中,本发明中,普鲁兰多糖、硒多糖、壳聚糖的复合,使三种多糖在食用膜应用上,性能互补,解决普鲁兰多糖解决壳聚糖具有抑菌活性但不具有阻水阻氧性能,硒多糖解决食用膜功能单一问题,使本发明的使用膜具有普通食用膜具有的阻隔性等性能外还具有较好的抑菌性和保健作用。
本发明的有益效果是:本发明的食用膜结构紧密、阻水和阻氧性能高,机械强度好,同时还具有光谱的抑菌性能和抗金属中毒、抗氧化、抗病毒、抗肿瘤、提高机体免疫力等保健作用。

一种多糖/塔拉胶复合型食用膜由质量份以下原料组成:普鲁兰多糖40份、硒多糖1份、壳聚糖5份、塔拉胶100份、多元醇类增塑剂10份;其中,多元醇类增塑剂为甘油、山梨醇、聚乙二醇。
其制备方法包括以下步骤:
(1)将壳聚糖、硒多糖、壳聚糖加入到质量浓度为1%已酸溶液中溶解得到多糖溶液;
(2)将塔拉胶制成质量浓度我5%的溶液,置于80℃条件下搅拌5小时;

(4)取步骤(3)所得的混合物均匀平铺于干燥的模具中,在45℃条件下鼓风干燥,冷却后揭膜,将膜存储在相对湿度为53%的干燥器中,在25℃条件下平衡72h,即得本发明的一种多糖/塔拉胶复合型食用膜。
3.根据权利要求2所述的一种多糖/塔拉胶复合型食用膜的制备方法,其特征在于:所述的步骤(4)中,干燥器中采用饱和六水硝酸镁溶液为干燥剂。
