Abstract
本发明涉及一种富铬大青枣酒,其制备方法为:(1)挑选未成熟的富铬大青枣,洗净后去核,果肉和皮用刀切成块,然后将其打浆,加入白糖,搅拌均匀;(2)将富铬大青枣浆加入果胶酶和纤维素酶进行酶处理,果胶酶的添加量为富铬大青枣浆总重量的0.01%-0.03%;纤维素酶的添加量为富铬大青枣浆总重量的0.005%-0.01%,在40-60℃下酶解8-12小时;(3)将酶解后的富铬大青枣浆离心分离,取上清富铬大青枣汁,进行灭菌处理;(4)将灭菌后富铬大青枣汁和糯米醪糟按2∶3的质量比例混合,搅拌均匀,置于发酵罐中,加入总质量0.1%的酵母菌种进行发酵,发酵时间控制为15-20天;(5)发酵结束后,从发酵罐底阀门放出原酒,经离心机过滤除渣,灭菌,低温灌装。

技术领域
本发明涉及饮料酒领域,具体涉及一种富铬大青枣酒。
背景技术
富铬大青枣色、香、味俱佳,有果王之称。果实营养丰富,糖含量高达12%~20%,含蛋白质5.56%,脂肪16.1%,碳水化合物67.29%,还含有丰富的维生素A、维生素B、维生素C,且以维生素A含量最高,是所有水果中少见的。此外还含有少量的钙、磷、铁及其他矿物质。果实既宜鲜食,又适加工,可满足消费者对果品多样化的需要。富铬大青枣生长快、结果早,丰产稳产,是果农致富的好树种。
富铬大青枣营养丰富,食用富铬大青枣具抗癌、美化肌肤、防治高血压、动脉硬化、防治便秘、清肠胃的功效。果实除鲜食外,还可加工成果汁、果酱、糖水果片、蜜饯、盐渍品等食品,此外,富铬大青枣叶的提取物还能抑制化脓球菌、大肠杆菌、绿脓杆菌,同时具有抑制流感病毒的作用。富铬大青枣有生津止渴、益胃止呕、利尿止晕的功效。富铬大青枣能降低胆固醇,常食有利于防治心脑血管疾病,有益于视力,能润泽皮肤。富铬大青枣有明显的抗氧化和保护脑神经元的作用,能延缓细胞衰老、提高脑功能。它可以明显提高红细胞血红蛋白氧化率。富铬大青枣所含膳食纤维,能使粪便在结肠内停留时间缩短,有通便的作用,因此食富铬大青枣可防治结肠癌。
富铬大青枣虽然好吃,且营养价值丰富,但是其果实成熟季节短,且不易保存,此外一些品相相对较差的富铬大青枣在市场上也卖不上好价钱。因此,富铬大青枣的保存、深加工产品是除成熟富铬大青枣鲜果直接销售之外,果农和水果加工厂选择的另一出路。
发明内容
本发明的目的是提供一种富铬大青枣酒;
本发明的目的是通过下列的技术方案实现的:
本发明所述的富铬大青枣酒,是按以下方法制备而成:
(1)挑选未成熟的富铬大青枣,洗净后去核,果肉和皮用刀切成块,然后将其打浆,加入白糖,搅拌均匀;(2)将富铬大青枣浆加入果胶酶和纤维素酶进行酶处理,果胶酶的添加量为富铬大青枣浆总重量的0.01%-0.03%;纤维素酶的添加量为富铬大青枣浆总重量的0.005%-0.01%,在40-60℃下酶解8-12小时;(3)将酶解后的富铬大青枣浆离心分离,取上清富铬大青枣汁,进行灭菌处理;(4)将灭菌后富铬大青枣汁和糯米醪糟按2∶3的质量比例混合,搅拌均匀,置于发酵罐中,加入总质量0.1%的酵母菌种进行发酵,发酵时间控制为15-20天;(5)发酵结束后,从发酵罐底阀门放出原酒,经离心机过滤除渣,灭菌,低温灌装。
所述步骤(4)的发酵温度控制在27-34℃。
本发明提供的富铬大青枣酒果香浓郁,酒味清醇,含有丰富的维生素A、维生素B、维生素C及多种矿物质,且加工工艺简单,成本低。

下面通过实施例进一步说明本发明。应该理解的是,本发明的实施例是用于说明本发明而不是对本发明的限制。根据本发明的实质对本发明进行的简单改进都属于本发明要求保护的范围。
实施例1
一种富铬大青枣酒,是按以下方法制备而成:
(1)挑选未成熟的富铬大青枣,洗净后去核,果肉和皮用刀切成块,然后将其打浆,加入白糖,搅拌均匀;(2)将富铬大青枣浆加入果胶酶和纤维素酶进行酶处理,果胶酶的添加量为富铬大青枣浆总重量的0.01%;纤维素酶的添加量为富铬大青枣浆总重量的0.005%,在40℃下酶解12小时;(3)将酶解后的富铬大青枣浆离心分离,取上清富铬大青枣汁,进行灭菌处理;(4)将灭菌后富铬大青枣汁和糯米醪糟按2∶3的质量比例混合,搅拌均匀,置于发酵罐中,加入总质量0.1%的酵母菌种进行发酵,发酵时间控制为15天;(5)发酵结束后,从发酵罐底阀门放出原酒,经离心机过滤除渣,灭菌,低温灌装。

实施例2
一种富铬大青枣酒,是按以下方法制备而成:
(1)挑选未成熟的富铬大青枣,洗净后去核,果肉和皮用刀切成块,然后将其打浆,加入白糖,搅拌均匀;(2)将富铬大青枣浆加入果胶酶和纤维素酶进行酶处理,果胶酶的添加量为富铬大青枣浆总重量的0.03%;纤维素酶的添加量为富铬大青枣浆总重量的0.01%,在6℃下酶解8小时;(3)将酶解后的富铬大青枣浆离心分离,取上清富铬大青枣汁,进行灭菌处理;(4)将灭菌后富铬大青枣汁和糯米醪糟按2∶3的质量比例混合,搅拌均匀,置于发酵罐中,加入总质量0.1%的酵母菌种进行发酵,发酵时间控制为20天;(5)发酵结束后,从发酵罐底阀门放出原酒,经离心机过滤除渣,灭菌,低温灌装。
所述步骤(4)的发酵温度控制在34℃。

1.一种富铬大青枣酒,其特征在于是按以下方法制备而成:
(1)挑选未成熟的富铬大青枣,洗净后去核,果肉和皮用刀切成块,然后将其打浆,加入白糖,搅拌均匀;(2)将富铬大青枣浆加入果胶酶和纤维素酶进行酶处理,果胶酶的添加量为富铬大青枣浆总重量的0.01%-0.03%;纤维素酶的添加量为富铬大青枣浆总重量的0.005%-0.01%,在40-60℃下酶解8-12小时;(3)将酶解后的富铬大青枣浆离心分离,取上清富铬大青枣汁,进行灭菌处理;(4)将灭菌后富铬大青枣汁和糯米醪糟按2∶3的质量比例混合,搅拌均匀,置于发酵罐中,加入总质量0.1%的酵母菌种进行发酵,发酵时间控制为15-20天;(5)发酵结束后,从发酵罐底阀门放出原酒,经离心机过滤除渣,灭菌,低温灌装。
2.如权利要求1所述的富铬大青枣酒,其特征在于所述步骤(4)的发酵温度控制在27-34℃。
