本发明涉及食品加工技术领域,具体涉及一种保健月饼及其制备方法。
背景技术
月饼是久负盛名的中国传统小吃之一,中秋节节日食俗。月饼圆又圆,又是合家分吃,象征着团圆和睦。月饼起源于唐朝,在我国已有千年历史,发展到今天,品种繁多,花样各异。月饼制作时用料考究、做功精细、制作严谨,月饼大多具有皮薄、松软、香酥,风味诱人、回味无穷的特点,令社会不同阶层的消费者垂涎,部分月饼甚至出口到国外。
随着人们生活质量的提高,对月饼提出了更高的要求。现有月饼的配方中使用了大量的猪油、冰糖等原料,其饱和脂肪酸的含量和热量都很高,会增加血液稠度,使血糖升高,不能多吃;而且其含油脂多,易氧化变质和受潮,为延长其保质期,向月饼中添加了不少防腐剂;此外,现有的月饼还缺乏营养保健的功效;故对月饼进行改良是很有必要的。
发明内容
为了解决现有技术存在的上述问题,本发明提供了一种营养丰富且具有保健功能的保健月饼及其制备方法。
本发明所采用的技术方案为:
一种保健月饼:包括下述重量份的原料,小麦粉15-40份、食用油12-20份、白砂糖2-13份、饴糖3-5份、冬瓜糖4-6份、白芝麻仁2-12份、黑芝麻仁10-15份、花生仁5-18份、糖玫瑰15-19份、椰丝24-26份、全脂奶粉6-8份、糯米粉11-13份、葡萄糖3-5份、南瓜子5-7份、糖桂花1-3份、葡萄干6-8份、青梅条1-3份、金桔丝1-3份、花椒粉1-3份、胡椒粉3-5份、味精1-2份、鸡蛋1-3份、核桃仁17-19份、食用盐1-2份、饮用水1-3份。

所述保健月饼的制备方法,包括以下步骤:
(1)将小麦粉炒熟;将白砂糖熬制成糖稀;
(2)将炒制后的小麦粉、食用油和糖稀混合搅拌均匀,制成面团;所使用的食用油可以使花生油、大豆油、芝麻油等;
(3)将花生仁过油炸,待炸制后粉碎成花生粒;
(4)将核桃仁进行粉碎,得核桃粒;
(5)将花生粒、核桃粒、饴糖、冬瓜糖、白芝麻仁、黑芝麻仁、糖玫瑰、椰丝、全脂奶粉、糯米粉、葡萄糖、南瓜子、糖桂花、葡萄干、青梅条、金桔丝、花椒粉、胡椒粉、味精、鸡蛋、食用盐和饮用水混合搅拌均匀得馅料;青梅条和金桔丝均比较细小,不会影响整个月饼的外观;
(6)用步骤(2)的面团包裹步骤(5)的馅料,然后放入制饼机内进行制饼,得月饼生坯;
(7)烤制月饼生坯得所述的保健月饼。

小麦粉,用小麦加工的面粉,一般指提取麸皮后的面粉。小麦粉富含蛋白质、碳水化合物、维生素和钙、铁、磷、钾、镁等矿物质,有养心益肾、健脾厚肠、除热止渴的功效。
食用油也称为“食油”,是指在制作食品过程中使用的动物或植物油脂。常见的食用油多为植物油脂,包括花生油、火麻油、玉米油、橄榄油、葵花籽油、大豆油、芝麻油、核桃油、牡丹籽油等等,食用油的加入可以增加月饼的香酥口感。
白砂糖是食糖的一种,味甘、性平,具有润肺生津、止咳、和中益肺、舒缓肝气、滋阴、调味、除口臭的功效。
饴糖是以高粱、米、大麦、粟、玉米等淀粉质的粮食为原料,经发酵糖化制成的食品。味甘,性温;能补中缓急,润肺止咳,解毒等。
冬瓜糖滋味清甜、口感绵柔、具有清热润肺、利尿解毒的功效。对咽喉部有良好的湿润和物理治疗作用;能软化和保护血管,有降低人体中血脂和胆固醇的作用;能增强皮肤的抗损伤能力,冬瓜糖中含有的胡萝卜素,有助于维持皮肤细胞组织的正常机能,刺激皮肤新陈代谢,保持皮肤润泽细嫩。
白芝麻仁,又名脂麻、胡麻(学名:Sesamum indicum),是胡麻的籽种,芝麻仁含有大量的脂肪和蛋白质,其中主要为油酸、亚油酸、棕榈酸、花生酸等的甘油脂;又含甾醇、芝麻素、芝麻酚、叶酸、烟酸、蔗糖、卵磷脂、蛋白质;还有膳食纤维、糖类、维生素a、维生素B1,B2、尼克酸、维生素E、卵磷脂、钙、铁、镁等营养成分;芝麻中的亚油酸(Linoleic、C18∶2)有调节胆固醇的作用;芝麻中含有丰富的维生素E,能防止过氧化脂质对皮肤的危害,抵消或中和细胞内有害物质游离基的积聚,可使皮肤白皙润泽,并能防止各种皮肤炎症;芝麻还具有养血的功效,可以治疗皮肤干枯、粗糙、令皮肤细腻光滑、红润光泽。
黑芝麻仁有显著的医疗保健功效,黑芝麻中的维生素E非常丰富,可延缓衰老;润五脏强筋骨益气力;可强壮身体益寿延年滋补肝肾润养脾肺及胃肠阴虚所致的便秘,产后阴血不足所致的乳少,都可以得到缓解或根除。
花生仁是指去掉花生壳的那部分,即花生的种子。花生中含有的维生素E和锌能增强记忆、抗老化、延缓脑功能衰退和滋润皮肤;花生中的不饱和脂肪酸有降低胆固醇的作用,有助于防治动脉硬化、高血压和冠心病。此外,花生纤维组织中的可溶性纤维,可以降低有害物质在体内的积存和所产生的毒性作用,减少肠癌发生的机会。
糖玫瑰是云南大理地区一种传统食品,食用玫瑰含有丰富的营养成分。糖玫瑰具有促进新陈代谢、养颜美容、增加血液循环、防止便秘、缓解口臭的功效。
椰丝是椰子的果肉加工成的,即黄色硬壳内除椰汁外白色的果肉部分,算是天然食品。椰丝含有丰富的维生素、矿物质和微量元素,具有提高记忆力,增加食欲的功效。
全脂奶粉用纯乳生产的,基本保持了乳中的原有营养成分。可使皮肤白皙有光泽,也可补充丰富的钙质、适合缺钙的人食用。
糯米粉含有蛋白质、脂肪、糖类、钙、磷、铁、维生素B1、维生素B2、烟酸及淀粉等,味甘、性温,具有补中益气,健脾养胃,止虚汗之功效,对脾胃虚寒,食欲不佳,腹胀腹泻有一定缓解作用。
葡萄糖又称为玉米葡糖,是自然界分布最广且最为重要的一种单糖。它是生命活动中不可缺少的物质,在人体内能直接参与新陈代谢过程;在消化道中,葡萄糖比任何其他单糖都容易被吸收,而且被吸收后可直接为人体组织利用。
南瓜子为葫芦科南瓜属植物南瓜Cucurbita moschata Duch.的种子,具有补中益气、降糖止渴的功效。南瓜子中含有丰富的锌,参与人体内核酸、蛋白质的合成,是肾上腺皮质激素的固有成分,为人体生长发育的重要物质;此外,南瓜子中含有的钴,能活跃人体的新陈代谢,促进造血功能,对防治糖尿病和降低血糖有特殊的疗效。
糖桂花是用鲜桂花和白砂糖精加工而成。糖桂花具有促进呼吸道痰液排出。化痰、平喘的作用;能促进肠道秽浊物质的排泄,且可以祛除口臭。
葡萄干是在日光下晒干或在阴影下晾干的葡萄的果实。葡萄干中铁和钙的含量十分丰富,是体弱贫血者的滋补佳品,可帮助改善贫血;葡萄干内含大量的葡萄糖,对心肌有营养作用,有助于冠心病患者的康复;此外,葡萄干中还含有多种矿物质和维生素、氨基酸,对神经衰弱和过度疲劳者有较好的补益作用。
青梅条具有排毒养颜、祛斑祛痘、减肥纤体、降脂降压、清肝明目、解酒排油等功能。
金桔丝具有有抗炎、去痰、抗溃疡、助消食、降血压、增强心脏功能和理气止咳的功效。
鸡蛋具有很高的营养价值,是优质蛋白质、B族维生素的良好来源,还能提供一定数量的脂肪、维生素A和矿物质。
核桃仁具有补虚强体、提供营养的功效;核桃仁中含有较多的蛋白质及人体营养必需的不饱和脂肪酸,这些成分皆为大脑组织细胞代谢的重要物质;此外,核桃仁也能净化血液、降低胆固醇、防止动脉硬化、降低胆固醇。
本发明的有益效果为:本发明所述的保健月饼中含有的冬瓜糖、白芝麻仁、核桃仁有刺激皮肤新陈代谢、保持皮肤润泽细嫩、降低胆固醇的功效;花生仁和糖桂花可以降低有害物质在体内的积存;糖玫瑰、南瓜子有促进新陈代谢、增加血液循环的功效;且本发明所述的保健月饼中含有丰富的营养成分,能为人体提供必需的氨基酸、维生素、矿物质及微量元素;即本发明所述的保健月饼即具有保健的功能,又能给人体提供丰富的营养元素。

一种保健月饼,包括下述重量份的原料,小麦粉15kg、食用油12kg、白砂糖2kg、饴糖3kg、冬瓜糖4kg、白芝麻仁2kg、黑芝麻仁10kg、花生仁5kg、糖玫瑰15kg、椰丝24kg、全脂奶粉6kg、糯米粉11kg、葡萄糖3kg、南瓜子5kg、糖桂花1kg、葡萄干6kg、青梅条1kg、金桔丝1kg、花椒粉1kg、胡椒粉3kg、味精1kg、鸡蛋1kg、核桃仁17kg、食用盐1kg、饮用水1kg。
所述保健月饼的制备方法,包括以下步骤:
(1)将小麦粉在炒制温度为120℃的条件下炒制30min;将白砂糖在温度为115℃的温度下熬制115min,得糖稀;
(2)将炒制后的小麦粉、食用油和糖稀在搅拌速度为20r/min的条件下,混合搅拌30min搅拌均匀,制成面团;
(3)将花生仁过油炸,待炸制后粉碎成颗粒大小为20目的花生粒;
(4)将核桃仁进行粉碎,得颗粒大小为20目的核桃粒;
(5)将花生粒、核桃粒、饴糖、冬瓜糖、白芝麻仁、黑芝麻仁、糖玫瑰、椰丝、全脂奶粉、糯米粉、葡萄糖、南瓜子、糖桂花、葡萄干、青梅条、金桔丝、花椒粉、胡椒粉、味精、鸡蛋、食用盐和饮用水在搅拌速度为20r/min的条件下,混合搅拌30min,得馅料;
(6)用步骤(2)的面团包裹步骤(5)的馅料,然后放入制饼机内进行制饼,得月饼生坯;
(7)将月饼生坯在温度为224℃的温度下烤制12min,得所述的保健月饼。
实施例二

(1)将小麦粉在炒制温度为125℃的条件下炒制35min;将白砂糖在温度为118℃的温度下熬制120min,得糖稀;
(2)将炒制后的小麦粉、食用油和糖稀在搅拌速度为25r/min的条件下,混合搅拌35min搅拌均匀,制成面团;
(3)将花生仁过油炸,待炸制后粉碎成颗粒大小为30目的花生粒;
(4)将核桃仁进行粉碎,得颗粒大小为30目的核桃粒;
(5)将花生粒、核桃粒、饴糖、冬瓜糖、白芝麻仁、黑芝麻仁、糖玫瑰,椰丝,全脂奶粉,糯米粉,葡萄糖、南瓜子、糖桂花、葡萄干、青梅条、金桔丝、花椒粉、胡椒粉、味精、鸡蛋、食用盐和饮用水在搅拌速度为25r/min的条件下,混合搅拌35min,得馅料;
(6)用步骤(2)的面团包裹步骤(5)的馅料,然后放入制饼机内进行制饼,得月饼生坯;
(7)将月饼生坯在温度为225℃的温度下烤制14min,得所述的保健月饼。实施例三
一种保健月饼,包括下述重量份的原料,小麦粉40kg、食用油20kg、白砂糖13kg、饴糖5kg、冬瓜糖6kg、白芝麻仁12kg、黑芝麻仁15kg、花生仁18kg、糖玫瑰19kg、椰丝26kg、全脂奶粉8kg、糯米粉13kg、葡萄糖5kg、南瓜子7kg、糖桂花3kg、葡萄干8kg、青梅条3kg、金桔丝3kg、花椒粉3kg、胡椒粉5kg、味精2kg、鸡蛋3kg、核桃仁19kg、食用盐2kg、饮用水3kg。
所述保健月饼的制备方法,包括以下步骤:
(1)将小麦粉在炒制温度为130℃的条件下炒制40min;将白砂糖在温度为120℃的温度下熬制125min,得糖稀;
(2)将炒制后的小麦粉、食用油和糖稀在搅拌速度为30r/min的条件下,混合搅拌40min搅拌均匀,制成面团;
(3)将花生仁过油炸,待炸制后粉碎成颗粒大小为40目的花生粒;
(4)将核桃仁进行粉碎,得颗粒大小为40目的核桃粒;
(5)将花生粒、核桃粒、饴糖、冬瓜糖、白芝麻仁、黑芝麻仁、糖玫瑰、椰丝、全脂奶粉、糯米粉、葡萄糖、南瓜子、糖桂花、葡萄干、青梅条、金桔丝、花椒粉、胡椒粉、味精、鸡蛋、食用盐和饮用水在搅拌速度为30r/min的条件下,混合搅拌40min,得馅料;
(6)用步骤(2)的面团包裹步骤(5)的馅料,然后放入制饼机内进行制饼,得月饼生坯;
(7)将月饼生坯在温度为226℃的温度下烤制15min,得所述的保健月饼。

Claims (10)
1.一种保健月饼,其特征在于:包括下述重量份的原料,小麦粉15-40份、食用油12-20份、白砂糖2-13份、饴糖3-5份、冬瓜糖4-6份、白芝麻仁2-12份、黑芝麻仁10-15份、花生仁5-18份、糖玫瑰15-19份、椰丝24-26份、全脂奶粉6-8份、糯米粉11-13份、葡萄糖3-5份、南瓜子5-7份、糖桂花1-3份、葡萄干6-8份、青梅条1-3份、金桔丝1-3份、花椒粉1-3份、胡椒粉3-5份、味精1-2份、鸡蛋1-3份、核桃仁17-19份、食用盐1-2份、饮用水1-3份。
2.根据权利要求1所述的保健月饼,其特征在于:包括下述重量份的原料,小麦粉20份、食用油15份、白砂糖8份、饴糖4份、冬瓜糖5份、白芝麻仁8份、黑芝麻仁12份、花生仁10份、糖玫瑰17份、椰丝25份、全脂奶粉7份、糯米粉12份、葡萄糖4份、南瓜子6份、糖桂花2份、葡萄干7份、青梅条2份、金桔丝2份、花椒粉2份、胡椒粉4份、味精1份、鸡蛋1份、核桃仁18份、食用盐1份、饮用水2份。
3.权利要求1-2之一所述保健月饼的制备方法,其特征在于:包括以下步骤:
(1)将小麦粉炒熟;将白砂糖熬制成糖稀;
(2)将炒制后的小麦粉、食用油和糖稀混合搅拌均匀,制成面团;
(3)将花生仁过油炸,待炸制后粉碎成花生粒;
(4)将核桃仁进行粉碎,得核桃粒;
(5)将花生粒、核桃粒、饴糖、冬瓜糖、白芝麻仁、黑芝麻仁、糖玫瑰、椰丝、全脂奶粉、糯米粉、葡萄糖、南瓜子、糖桂花、葡萄干、青梅条、金桔丝、花椒粉、胡椒粉、味精、鸡蛋、食用盐和饮用水混合搅拌均匀得馅料;
(6)用步骤(2)的面团包裹步骤(5)的馅料,然后放入制饼机内进行制饼,得月饼生坯;
(7)烤制月饼生坯得所述的保健月饼。
4.根据权利要求3所述保健月饼的制备方法,其特征在于:步骤(1)中,所述炒制的温度为120-130℃,炒制的时间为30-40min。
5.根据权利要求3所述保健月饼的制备方法,其特征在于:步骤(1)中,所述熬制的温度为115-120℃,熬制的时间为115-125min。
6.根据权利要求3所述保健月饼的制备方法,其特征在于:步骤(2)中,所述搅拌的速度为20-30r/min,搅拌的时间为30-40min。
7.根据权利要求3所述保健月饼的制备方法,其特征在于:步骤(3)中所述花生粒的大小为20-40目。
8.根据权利要求3所述保健月饼的制备方法,其特征在于:步骤(4)中,所述核桃粒的大小为20-40目。
9.根据权利要求3所述保健月饼的制备方法,其特征在于:步骤(5)中,所述搅拌的速度为20-30r/min,搅拌的时间为30-40min。
10.根据权利要求3所述保健月饼的制备方法,其特征在于:步骤(7)中,所述烤制的温度为224-226℃,烤制的时间为12-15min。
