背景技术
红枣不仅是人们喜爱的果品,也是一味滋补脾胃、养血安神、治病强身的良药。大枣含有丰富的维生素A、B、C等人体必须的多种维生素和18种氨基酸,脂肪,糖,钙、磷、铁、镁等矿物质,其中维生素C的含量竟高达葡萄、苹果的70~80倍,维生素P的含量也很高,这两种维生素对防癌和预防高血压、高血脂都有一定作用。红枣性温味甘,归脾胃经,有补中益气、养血安神、缓和药性的功能。
目前大枣的贮藏方法有很多,物理的贮藏方法有普通冷库贮藏、气调贮藏、减压贮藏、沙埋贮藏和热处理保鲜等;化学贮藏方法主要有涂膜保鲜和臭氧保鲜方法等。这些方法或存在低温冷害导致的大枣品质劣变严重、腐烂率高现象,或存在成本高、贮藏期有限缺陷,或存在食品安全隐患等不足。
发明内容
本发明针对现有技术存在的不足,提供一种大枣的保鲜贮藏方法。该保鲜方法处理的大枣腐烂率低,产品品质好,同时可有效地保持大枣的硬度、维生素C含量、以及防止可溶性固形物和可滴定酸含量的下降。
为了实现上述目的,本发明采用以下技术方案予以实现:
一种大枣的保鲜贮藏方法,包括以下的步骤:
⑴采前预处理
大枣采收前15天,避免使用农药喷洒树体,将黄连提取物、丁香提取物、氯化钙、精滤沼液、水按0.5:0.5:0.2:35:65的质量比配制成水溶液,每天上午9点喷洒树体;
⑵浸泡处理
在大枣微红期采收,采收时保留果柄,采收的鲜大枣先使用专用保鲜液在真空条件下浸泡大枣,在温度8~10℃条件下处理10~20min,然后使用专用护色剂在真空条件下浸泡大枣,在温度4~8℃条件下处理3~5min,所述的专用保鲜液是0.2~0.4g/L氨氧乙烯基甘氨酸水溶液、0.3~0.5g/L乳酸链球菌素水溶液、0.2~0.5g/L二氧化氯水溶液、0.02~0.05g/L茉莉酸甲酯水溶液、0.2~0.5g/L氯化钙水溶液按1:1:1:1:1的重量比配制而成,所述的专用护色剂是黄芩提取物、1-甲基环丙烯、壳聚糖、水按1:1:0.01:80~100的重量比配制而成;
⑶冷冻处理
经步骤⑵真空浸泡处理后的大枣进行真空包装后放入气调库,气调库初始温度3℃,湿度90%~95%,O2含量为3~5v%,CO2含量为2~4v%,在3天内将气调库温度缓慢降至-1℃,保持10~20h,然后将气调库温度1天内升至1℃,保持10~20h,再将气调库温度调至-0.5℃~0.5℃,恒温贮藏。
所述精滤沼液是沼气池的沼液经精密过滤装置过滤处理后得到的清液。
所述的茉莉酸甲酯水溶液配置时使用的助溶剂为乙醇。

一种大枣的保鲜贮藏方法,包括以下的步骤:
⑴采前预处理
大枣采收前15天,避免使用农药喷洒树体,将黄连提取物、丁香提取物、氯化钙、精滤沼液、水按0.5:0.5:0.2:35:65的质量比配制成水溶液,每天上午9点喷洒树体;
⑵浸泡处理

在大枣微红期采收,采收时保留果柄,采收的鲜大枣先使用专用保鲜液在真空条件下浸泡大枣,在温度10℃条件下处理20min,然后使用专用护色剂在真空条件下浸泡大枣,在温度8℃条件下处理5min,所述的专用保鲜液是0.4g/L氨氧乙烯基甘氨酸水溶液、0.5g/L乳酸链球菌素水溶液、0.5g/L二氧化氯水溶液、0.05g/L茉莉酸甲酯水溶液、0.5g/L氯化钙水溶液按1:1:1:1:1的重量比配制而成,所述的专用护色剂是黄芩提取物、1-甲基环丙烯、壳聚糖、水按1:1:0.01:100的重量比配制而成;
⑶冷冻处理
经步骤⑵真空浸泡处理后的大枣进行真空包装后放入气调库,气调库初始温度3℃,湿度95%,O2含量为5v%,CO2含量为4v%,在3天内将气调库温度缓慢降至-1℃,保持20h,然后将气调库温度1天内升至1℃,保持20h,再将气调库温度调至0.5℃,恒温贮藏。
本例使用的大枣品种为民勤红枣,保鲜期达到了7个月。
实施例3
一种大枣的保鲜贮藏方法,包括以下的步骤:
⑴采前预处理
大枣采收前15天,避免使用农药喷洒树体,将黄连提取物、丁香提取物、氯化钙、精滤沼液、水按0.5:0.5:0.2:35:65的质量比配制成水溶液,每天上午9点喷洒树体;
⑵浸泡处理
在大枣微红期采收,采收时保留果柄,采收的鲜大枣先使用专用保鲜液在真空条件下浸泡大枣,在温度8℃条件下处理15min,然后使用专用护色剂在真空条件下浸泡大枣,在温度4℃条件下处理4min,所述的专用保鲜液是0.3g/L氨氧乙烯基甘氨酸水溶液、0.4g/L乳酸链球菌素水溶液、0.35g/L二氧化氯水溶液、0.035g/L茉莉酸甲酯水溶液、0.4g/L氯化钙水溶液按1:1:1:1:1的重量比配制而成,所述的专用护色剂是黄芩提取物、1-甲基环丙烯、壳聚糖、水按1:1:0.01:80的重量比配制而成;
⑶冷冻处理
经步骤⑵真空浸泡处理后的大枣进行真空包装后放入气调库,气调库初始温度3℃,湿度95%,O2含量为4v%,CO2含量为3v%,在3天内将气调库温度缓慢降至-1℃,保持15h,然后将气调库温度1天内升至1℃,保持15h,再将气调库温度调至0℃,恒温贮藏。
本例使用的大枣品种为民勤红枣,保鲜期达到了10个月。
Claims (1)
1.一种大枣的保鲜贮藏方法,其特征在于,包括以下的步骤:
⑴采前预处理
大枣采收前15天,避免使用农药喷洒树体,将黄连提取物、丁香提取物、氯化钙、精滤沼液、水按0.5:0.5:0.2:35:65的质量比配制成水溶液,每天上午9点喷洒树体;
⑵浸泡处理
在大枣微红期采收,采收时保留果柄,采收的鲜大枣先使用专用保鲜液在真空条件下浸泡大枣,在温度8~10℃条件下处理10~20min,然后使用专用护色剂在真空条件下浸泡大枣,在温度4~8℃条件下处理3~5min,所述的专用保鲜液是0.2~0.4g/L氨氧乙烯基甘氨酸水溶液、0.3~0.5g/L乳酸链球菌素水溶液、0.2~0.5g/L二氧化氯水溶液、0.02~0.05g/L茉莉酸甲酯水溶液、0.2~0.5g/L氯化钙水溶液按1:1:1:1:1的重量比配制而成,所述的专用护色剂是黄芩提取物、1-甲基环丙烯、壳聚糖、水按1:1:0.01:80~100的重量比配制而成;
⑶冷冻处理
经步骤⑵真空浸泡处理后的大枣进行真空包装后放入气调库,气调库初始温度3℃,湿度90%~95%,O2含量为3~5v%,CO2含量为2~4v%,在3天内将气调库温度缓慢降至-1℃,保持10~20h,然后将气调库温度1天内升至1℃,保持10~20h,再将气调库温度调至-0.5℃~0.5℃,恒温贮藏。
