本发明属于一种保健食品,特别涉及一种用于增强记忆力的面食制品及其制备方法。
近年来,世界各国广泛地研究含蛋白质的高营养保健食品,以确保大脑必不可少的营养物质。目前,比较流行的脑黄金即为一种补脑保健品,其主要成分为深海鱼油,深海鱼油中含有27碳酸—即氨基酸,它主要功能是软化血管、防治动脉硬化,对老年人的作用比较明显,医学研究表明,长期服用脑黄金使人体细胞免疫能力下降。在公开号为CN1083312A的中国专利说明书中提到了一种“记忆营养面的加工方法”,它在普通面条中添加由胆碱CH1CH2CH2N+和多肽蛋白质构成的营养液使之成为记忆营养面,由于胆碱为药,多肽蛋白即为蛋清,该记忆营养面补充单一营养成分,而人体对各种营养成分及微量元素有一平衡,长期食用该营养面,将破坏这一平衡,而引起副作用。
本发明的目的在于提供一种可增强记忆力及智力、提高机体免疫力、改善大脑机能且无副作用的用于增强记忆力的面食制品及其制备方法。
本发明的技术解决方案为:
它由山药0.5~2%(重量比)、茯苓2.5~7.5%、莲子0.25~1%、桂圆0.2~1%、面粉20~50%、糖粉10~40%、植物油10~20%、奶粉10~25%、碳酸氢钠和碳酸氢铵0.2~0.6%及巧克力10~20%组成。
根据上述的记忆果还加入芝麻0.25~0.75%(重量比)、大豆磷脂0.25~0.75%、核桃仁0.5~1.5%和蜂蜜2~5%(重量百分比)。
该记忆果的制备方法为,取山药0.5~2%(重量比)、茯苓2.5~7.5%、莲子0.25~1%净选、粉碎、过筛,备用;取桂圆0.2~1%净选、切碎,备用;取糖粉10~40%制成糖桨,再取奶粉10~25%、植物油10~20%、碳酸氢铵和碳酸氢钠0.2~0.6%及上述山药、茯苓和莲子、桂圆加水混合,并加面粉20~50%进行调面、醒发、成型、烘烤,再冷却,取巧克力10~20%溶化、包衣,干燥灭菌、包装,即制得成品。
根据上述的记忆果的制备方法,还取芝麻0.25~0.75%(重量比)、大豆磷脂0.25~0.75%、核桃仁0.5~1.5%和蜂蜜2~5%、并将芝麻、核桃净选后与桂圆一起切碎,将大豆磷脂、蜂蜜与奶粉、植物油等一起投料。
由于山药具有补脾胃益肺肾功能,茯苓具有健脾宁心功能、莲子清火生津、桂圆补心肾、益智健脑、大豆中富含卵磷脂和蛋白质以及人体中必需的氨基酸,核桃仁、芝麻中富含蛋白质及人体中必需的微量元素,蜂蜜富含B族维生素、VC及钾、钠、钙、镁、磷等,并含有转化酶、淀粉酶、磷酸酶等多种活性物质,上述诸药配伍,由于蛋白质混合食用,使其氨基酸互补而获得人体必需的氨基酸、糖、脂肪、多种维生素,具有健脑益智作用,可增强记忆力、提高机体免疫力、改善大脑机能且无副作用,对老年人还可起到抗衰老、防治老年痴呆症的作用。
下面提供本发明的实施例:实施例1:
取山药0.6(单位:kg)、茯苓6、莲子0.8、桂圆0.3、面粉21、糖粉35、植物油12.3、碳酸氨钠0.2、碳酸氨铵0.3、奶粉12、巧克力11.5。
将茯苓、山药、莲子净选,采用混合法粉碎、过120目筛;将桂圆净选、切碎;将糖粉制成糖桨,再将奶粉、植物油、热糖桨、碳酸氢铵、碳酸氢钠、水(根据季节和空气相对湿度确定用水量)和过筛后的茯苓、山药、莲子及桂圆混合,然后加入面粉(精粉),进行调面,待其成面团时继续搅拌,使面团具有可塑性、有拉力而无弹性,即可;再静置醒发10~30分钟,再制果坯成型,再在110℃下左右温度下烘烤灭菌,烘烤时逐渐升温,烘烤温度不超过220℃,再冷却;将巧克力溶化、进行包衣;再干燥灭菌、包装,即制得成品。实施例2:
取山药1.6(单位:kg)、茯苓3、莲子0.3、桂圆0.8、面粉35、糖粉21、植物油10、碳酸氨钠0.2、碳酸氨铵0.1、奶粉10、巧克力18。
将茯苓、山药、莲子净选、采用混合法粉碎、过120目筛;将桂圆净选、切碎;将糖粉制成糖桨,再将奶粉、植物油、热糖桨、碳酸氢铵、碳酸氢钠、水(根据季节和空气相对湿度确定用水量)和过筛后的茯苓、山药、莲子及桂圆混合,然后加入面粉(精粉),进行调面,待其成面团时继续搅拌,使面团具有可塑性、有拉力而无弹性,即可;再静置醒发10~30分钟,再制果坯成型,在110℃下左右温度下烘烤灭菌,烘烤时逐渐升温,烘烤温度不超过220℃,再冷却;将巧克力溶化,进行包衣;再干燥灭菌、包装,即制得成品。实施例3:
取山药1(单位:kg)、茯苓5、莲子0.5、桂圆0.5、芝麻0.5、大豆磷脂0.5、核桃仁1、面粉100、糖粉70、蜂蜜10、植物油40、碳酸氢钠0.6、碳酸氢铵0.4、奶粉40、巧克力30。
将茯苓、山药、莲子净选、采用混合法粉碎、过120目筛;将桂圆、芝麻、核桃仁净选、切碎;将糖粉制成糖桨,再将奶粉、植物油、大豆磷脂、蜂蜜、热糖桨、碳酸氢铵、碳酸氢钠、水(根据季节和空气相对湿度确定用水量)和过筛后的茯苓、山药、莲子及桂圆、核桃仁、芝麻混合,然后加入面粉(精粉),进行调面,待其成面团时继续搅拌,使面团具有可塑性、有拉力而无弹性,即可;再静置醒发10~30分钟,再制果坯成型,在110℃下左右温度下烘烤灭菌,烘烤时逐渐升温,烘烤温度不超过220℃,再冷却;将巧克力溶化,进行包衣;再干燥灭菌、包装,即制得成品。

1.一种用于增强记忆力的面食制品,其特征在于,它由山药0.5~2%(重量比)、茯苓2.5~7.5%、莲子0.25~1%、桂圆0.2~1%、面粉20~50%、糖粉10~40%、植物油10~20%、奶粉10~25%、碳酸氢钠和碳酸氢铵0.2~0.6%及巧克力10~20%组成。
2.根据权利要求1所述的一种用于增强记忆力的面食制品,其特征在于,还加入芝麻0.25~0.75%、大豆磷脂0.25~0.75%、核桃仁0.5~1.5%和蜂蜜2~5%(重量百分比)。
3.一种用于增强的记忆力的面食制品的制备方法,其特征在于,取山药0.5~2%(重量比)、茯苓2.5~7.5%、莲子0.25~1%净选、粉碎、过筛,备用;取桂圆0.2~1%净选、切碎,备用;取糖粉10~40%制成糖桨,再取奶粉10~25%、植物油10~20%、碳酸氢铵和碳酸氢钠0.2~0.6%及上述山药、茯苓和莲子、桂圆加水混合,并加面粉20~50%进行调面、醒发、成型、烘烤,再冷却,取巧克力10~20%溶化、包衣,干燥灭菌、包装,即制得成品。
4、根据权利要求3所述的一种用于增强记忆力的面食制品的制备方法,其特征在于,还取芝麻0.25~0.75%(重量比)、大豆磷脂0.25~0.75%、核桃仁0.5~1.5%和蜂蜜2~5%、并将芝麻、核桃净选后与桂圆一起切碎,将大豆磷脂、蜂蜜与奶粉、植物油一起投料。
